I Knew It Was Bunco Night Because I Could Smell My Mom Making This!
Can you imaging making this for the next time you have a big party at your house? I used to make this and send it in our kids lunches. I picked up little “to-go” boxes from a restaurant supply and filled them with this homemade treat. Yeah..the other kids in the cafeteria were a bit jealous.
EASY 10-MINUTE MICROWAVE CARAMEL CORN
Ingredients:
- 10 cups air-popped popcorn
- 1 cup butter
- 1 cup light brown sugar
- ¼ cup light corn syrup
- ½ teaspoon vanilla extract
- ¼ teaspoon baking soda
- 1/4 teaspoon salt
Directions:
- Add popcorn to a large microwave-safe bowl. Set aside.
- In a medium saucepan, melt the butter over medium heat.
- Add butter and whisk constantly until fully combined and boiling.
- Remove from heat, whisk in corn syrup, vanilla, and baking soda until completely combined.
- Pour over popcorn and fold with a rubber spatula to even coat.
- Transfer bowl to microwave and microwave for 1 minute, remove from microwave and stir.
- Repeat 3 more times.
- Spread snack mix into a single layer onto a large baking sheet lined with foil.
- Allow to cool on the pan and break apart large clusters if desired.
- Cover the snack mix tightly once cooled; it will stay fresh for up to 2 weeks.
Quick Tip: Feel free to add peanuts, cashews, or almonds to popcorn to be coated and cooked as well.
