I Knew It Was Bunco Night Because I Could Smell My Mom Making This!

There was a big bowl of this on each card table, and my mom always made sure to make extra for us kids.

My parents belonged to a couples Bunco group for years. Sure it was fun to play and see who won the prizes in the dice rolling game that reminded me of Yahtzee. The biggest benefit was that for years, the couples got together at each other’s homes, enjoyed a meal together and visited.

Since there were six couples in the group, my parents hosted the night twice a year. I always knew when it was going to be at our house.

My mom would always make the best snacks to put on the tables. Sometimes she would bake something, but she almost always had homemade caramel corn. It usually was gone by the end of the night because it was just so tasty and addicting. Who could just eat one small handful?

I still make caramel corn, but I had never made it in the microwave before! That is brilliant since the oven version takes an hour with stirring every 15 minutes. So to be able to make this in 10 minutes, WOW..we might just have it a little more often.

This is what Emily of Layers of Happiness has to say about this easy to make treat.

Caramel corn that is made in the microwave, but tastes like something you could buy from a state fair. This stuff if gold. Made with only 5 ingredients and in less than 10 minutes!

Quick Tip: If you don’t have corn syrup go ahead and make this with honey.
