5 Ingredients Away From FANTASTIC! This chicken dish perfect for busy schedules.

Spotting a great recipe like this one isn’t rocket science.  Sure some recipes are a bit involved, but something like this is easy to fix and can be added onto to suit your taste.

Add diced avocado, onions, chopped cilantro and you have something that everyone will enjoy.

Not a huge fan of chicken breasts? Try boneless skinless chicken thighs.

ONE DISH QUESO CHICKEN BAKE {EASY DINNER RECIPE}

To make this dish you need 5 ingredients.  That is it.

  • Boneless Skinless Chicken Breast
  • Corn
  • Black Beans
  • RO*TEL Tomatoes with Green Chilis
  • Melty Queso Cheese {I used Velveeta- you want something that will melt well and mix in with the juices to make creamy queso dip!}

Directions:

  1. Lightly grease or spray a 9×13 glass dish for 4 chicken breasts.  Place your chicken flat on the dish.  If the chicken breasts are especially thick, you may want to cut in half to reduce the cooking time.
  2. Drain and rinse the beans, and open and drain the corn.   Pour the corn, beans and RO*TEL over the chicken breasts.
  3. Next cut the block of Velveeta into small cubes, around 1/2 inch.  If you want extra cheese you can use a little bit more.
  4. Then spread over the top of the chicken and veggies.
  5. Cover the dish with foil and put it into an oven preheated to 375˚F and bake for 45-55 minutes or until the chicken is done and the juices run clear.

Quick Tip: Serve with rice and beans, or slice and serve over a bod of lettuce for an awesome salad.
