Simple And Resourceful? What Is Not to Love

What is it about the Little House series that still resonate with women. They have been around for decades and will be around for decades to come.  I think a big part of it is the idea of living simply and using what you have. I remember the chapter where Mary and Laura Ingalls drizzled maple syrup in the snow for a frosty treat. That is such a unique concept, plus dolls were made out of corn cobs and scraps of fabric. This casserole is kind of like that. You use what you have and try to make it fit for your needs. This simple chicken casserole is easy to put together and will leave your family asking for more!

 

Amish Chicken Casserole Recipe

Ingredients

  • 12 ounces Noodles, any shape that you prefer, can be regular or gluten free
  • 1 1/2 – 2 cups Fresh or Frozen Broccoli
  • 1/4 cup Butter
  • 2 Tablespoons Cornstarch
  • 2 cups Chicken Broth
  • 1 – 2 cups Shredded Chicken
  • 1 cup Heavy Cream
  • 4 ounce can of Mushrooms (or can use fresh, too)
  • Red or Green Bell Pepper
  • Parmesan Cheese (or whatever you have on hand for the top)

Directions

    1. Cook noodles according to package directions.  Once the water came to a boil, I added in the box of noodles and I also added in my fresh broccoli to cook at the same time.
    2. While your noodles and broccoli are draining in a colander, use the same stock pot and melt 1/4 c. butter.
    3.  Add in 2 T. cornstarch once the butter is melted. Stir together to make a smooth sauce.
    4.   Add in 2 cups of chicken broth and 1 cup of cream and cook this mixture on low to medium heat until thickened.
    5. Once you have a thickened sauce, add in 1 – 2 cups of shredded chicken.
    6. Add in the canned (or fresh) mushroom pieces and 1/4 cup of diced pepper.  Salt and pepper to taste.
    7. Once this mixture is all together in your large stock pot, add back in your drained noodles and broccoli and stir together.  It may seem a little loose, but the sauce will thicken up nice and creamy and will be perfect once you cook the dish in the oven.
    8. Pour into a greased 9 x 13 pan or casserole dish.
    9. Add 1/4-1/2 cup of fresh grated parmesan on top.  (You could use any shredded cheese that you have on hand).
    10. Bake at 350 degrees for 30 minutes.  Enjoy this tasty casserole!!!

 

Quick Tip: you can always add other veggies if you are not a big broccoli fan such as cauliflower!
