Cracker Barrel Inspired Casserole So Tasty Your Mother-In Law Will Want Recipe!

If it is good enough for Cracker Barrel, it is good enough for me!

This quick and easy hash brown casserole will make your next get together “fuss free” and is so delicious even you Mother-in-law will want your recipe! Whether or not you decide to share it is up to you.

This is always an easy side dish to take over to someone who could use a little extra TLC. The last time I took this dish to someone, the thing they loved the most was this dish. I was almost embarrassed to tell them how easy it was.

This is what Dan at Cakes Cottage has to say about his Cracker Barrel inspired recipe.

“Leftovers?  I’ve consistently started doubling this recipe for my family hoping for leftovers, but, the more I make, the more is eaten. If I want any the next day (because they are just as good heated up), I have to hide them.”

My son loved this so much he asked me to make it for breakfast!

Ingredients

  • 1 package Ore-Ida frozen hash brown potatoes, thawed
  • 1/2 cup diced onion
  • 1 (10 1/4 ounce) can Campbell’s cream of chicken soup
  • 1/4 tsp pepper
  • 1 tsp Morton salt
  • 1/2 cup melted Land O Lakes butter
  • 2 cups Kraft Cheddar cheese, grated, Plus more for sprinkling on top
  • 1 16 oz. container Daisy sour cream
  • optional – green onions, sliced (green parts only)

Instructions

  1. Preheat oven to 350°F
  2. Grease a 9 x 13-inch baking pan.
  3. In a large bowl, mix all ingredients together and spread it out in a casserole dish.
  4. Bake for 45 minutes or until brown on top and cheese has melted.
  5. In the last few minutes of baking, sprinkle the top of the casserole with additional cheese and bake until melted. Serve.
  • Optional – Sprinkle with sliced green onions

Quick tip. Great dish to serve with oven baked chicken. I think this would make a great side dish for a brunch!

      I have heard them called Funeral potatoes as well..but I like Company potatoes much better :~D

    Thank you for sharing. I have never eaten at Cracker Barrell, but I have made those potatoes just like this for years and years. My Mom made them, and they are every church luncheon, Not to mention every funeral that I have ever served at, or attended thru out Utah, Wyoming, and Idaho. No matter where they are served the is known as FUNERAL POTATOES (LOL even at Thanksgiving and Easter Dinners). As you can tell we love them. Thank you again for your recipes, I have found some good ones.

    I’ve been wanting to try these, but it doesn’t say what size package the Ore Ida Hash-browns are! Please advise! I read the comments below the recipe, hoping to find out, but no one commented on that!

      Hi Carla, it is the 30 once bag. Hope that helps. I think it is a pretty standard size.. not that I buy a ton of frozen hash browns unless I am making this! Hope you enjoy!
