What Happens When You Combine 5 Ingredients in your Crock Pot And Leave It? Magic.

This delicious and easy to make in the crock pot, this Hawaiian BBQ Chicken combines the rich flavor of barbecue sauce with sweet pineapple!  It is great that you can just toss everything in the Crockpot and walk away because not only do you have a wonderful meal, the mess is pretty easy to deal with.  As much as I love being able to put  rice in the steamer, sometimes I still need something a little more portable. Wrap a thin layer of rice, topped with this and then a fistful of shredded lettuce into a tortilla and HELLO.. or should I say Aloha to an amazing lunch on the go!

CROCKPOT HAWAIIAN BBQ CHICKEN

Ingredients

  • 1 1/2 Pounds Chicken Breasts
  • Salt & Pepper to taste
  • 1 1/2 Cups BBQ Sauce
  • 1 Teaspoon Soy Sauce
  • 1 Teaspoon Garlic Minced
  • 1-2 Cans Pineapple Chunks, I like to use a full can in the Crockpot and another can for serving
  • Rice for serving, Optional

Instructions

    1. Place the chicken breasts in the bottom of your slow cooker. Sprinkle with salt and pepper to taste.
    2. In a small bowl, whisk together the bbq sauce, soy sauce, and garlic. Pour sauce over chicken.
    3.  Pour 1 can of pineapple chunks over the chicken.
    4. Cover the Crockpot and cook the chicken on low for 6-8 hours or high for 4-6 hours.
    5. When chicken is done cooking, shred and serve over rice and topped with more pineapple and green onion if desired.

 

Quick Tip: Make this and put it in the freezer for later. Trust me on this, if you have a huge crowd of company coming for the weekend, wont it be nice to just pull this out and have it ready? The answer to that is yes.
