I Couldn’t Believe My Serving Bowl Was Emptied So Quickly

I think one of the reasons I love this recipe so much is because it can be changed so drastically with swapping out just a few ingredients. I love Ranch dressing, but sometimes I want something a little lighter so will use an Italian or Greek dressing instead. Super easy and like I mentioned before, sometimes it comes down to using what you have on hand. Maybe I should call this the Resourceful Salad!

Bacon Cheddar Ranch Pasta Salad Recipe

 

Ingredients

 

  • 8 ounces Rotini
  • 12 ounces Bacon
  • 8 ounces Cheddar Cheese
  • 1 pint Cherry Tomatoes, halved
  • 2 cups Broccoli Florets
  • 3/4 cup Ranch Dressing
  • 1/4 cup Milk
  • Ground Black Pepper, to taste

 

Directions

 

  1. Boil large pot of water for pasta and cook according to package instructions, then drain and rinse.
  2. While water is coming to a boil, cook the bacon and chop remaining ingredients.
  3. In a small bowl, mix together the ranch dressing and milk.
  4. To assemble, in a large bowl combine the cooked pasta, bacon, cheese, tomatoes, broccoli, and ranch mixture.
  5. Season to taste with black pepper.
  6. Cover and chill until ready to serve.

 

Quick Tip: Want to make this a little more of a meal? Go ahead and add cubed ham into this salad for a boost of protein.
