No Fuss..no Guilt..LOTS of flavor! I guess this is a Win-Win-Win!

I love being able to throw something together but if you are watching your calories it is easy to end up consuming more than you had hoped. I mean the cream sauces and cheeses just rack up the calories and fat, but then along comes a recipe like this one. Sensible, yet slim.

I will be honest with you, I am not the biggest fan of ground turkey. It isn’t the flavor, it is the texture that just doesn’t sit well. But I love chicken sausage and ground chicken so I am using that instead.

Actually if you have some venison in the freezer that needs to be used, this would be a great recipe for that.

This casserole is full of spices, vegetables, and lean protein. So go ahead. Have seconds! This is the kind of food that really will make you big and strong..just like mom used to promise when coaxing you to eat something new.

Dara knows what it takes to make meals that boast high flavor without the fat. she has lost over 60 pounds by changing the way she eats and ramping up the exercise.

Congratulations Dara! What a huge accomplishment and lifestyle change.

This is what Dara of Cookin Canuck has to say about this delicious dinner!

Southwestern Turkey Rice Casserole …Spices, vegetables, turkey and rice come together for an easy, healthy weeknight dinner! 267 calories and 7 Weight Watchers SmartPoints per serving!

Quick Tip: If you want to substitute lean ground beef, feel free. It is your recipe! I am also partial to quinoa over brown rice. Seriously, you can add or swap out whatever you want. No judgement here!

This plate is full of flavor without being full of guilt!

Sometimes it is easy to be jealous of someones’ plate. Especially if you are counting calories or carbs!

Trust me I know! I have been dieting my whole life and there is nothing more frustrating than trying to cut back on your calorie intake, knowing that you will not be eating the food you love! Sure, this might mean that the super cheesy sour cream chicken enchiladas don’t take front and center on the menu, but when you add in great options like this salad you won’t even miss it.

I also love that you can have all the ingredients prepped and ready to toss together during the week for lunches. I think one of the things that sabotages alot of our eating is the fact we don’t plan ahead and have food that is healthy ready to eat WHEN we are hungry. As a result we end up just grabbing something from the snack bar, the food truck, drive-thru, or the fridge.

Feel free to customize this recipe to suit your taste and needs. On a Weight Watchers point program? Cut down on the corn and beans and add in bell peppers and spicy pickled carrots.

This is what Erin of Well Plated has to say about her yummy salad.

This Skinny Taco Salad is also ideal for meal prep. Chop the veggies and cook the turkey in advance and store them individually in the refrigerator. Then throughout the week, you can quickly assemble individual portions and add any other toppings you desire.

GO TO THE NEXT PAGE FOR INGREDIENTS AND DIRECTIONS.

Quick Tip: If you are taking this salad to work or on your next picnic, consider layering the ingredients with the dressing on the bottom, followed by meat, beans, corn, tomatoes, and then lettuce last. When ready to serve turn it upside down on a plate or bowl.

Less that 340 calories a serving makes this tasty main dish something to celebrate!

For those following Weight Watchers points this full of flavor dish weighs in at only 8 points!

I love being able to fix food for my family that everyone will love, but when you are keeping an eye on calories it seems that lean meats and lots of vegetables are the staples on the table.

Being able to create something that will make everyone happy that it is dinner time is a huge win -win. Plus, so many people are trying to watch their waistlines without sacrificing good food so this casserole is perfect to take along to any gathering or get together

My family loves enchiladas. It is one of those things I fix on birthdays and special events since it is often requested. Anytime our son, who served in the Marines, would be coming home from a deployment I made sure it was on the menu.

Because this is super easy and sensible on calories, I think we might be having this more often.

This is what Emily at Emily Bites has to say about this recipe,

This Layered Chicken Enchilada Bake is like a cross between flavorful enchiladas, a hearty casserole, and an artfully layered lasagna (with tortillas in place of pasta). The flavors and textures are fantastic. I love the sweet kernels of corn with the zippy enchilada sauce and between the chicken, tortillas and two kinds of beans, this casserole is super filling. Plus, it’s easy to make and you don’t have to roll any enchiladas – bonus!

Quick Tip: Steam some rice and have a big tossed salad with a salsa vinaigrette and you are ready for dinner!  How easy is that!
