Make An Impression That Is Unforgettable!

I love making desserts, but I tend to get a bit in a rut sometimes. And I absolutely LOVE lemon and blueberries together. Anytime of day!

But when it comes to cakes, I am not always very confident. Sometimes they tend to be dry and we end up having now being able to eat all of it. Sad but true. I know I have mentioned before on Urban Retro Recipes that we are more of a cookie and pie family.

While I was looking for good blueberry and lemon recipes I came across this one. It is for a poke cake. There is no danger of this drying out! It has moisture and flavor seeped into every last bite. In fact, this makes a great cake to make ahead. Perfect for when company, like your mother-in-law, comes to visit and you want everything to be cleaned up before they get there. So you have more time visiting and less time cleaning in the kitchen!

That’s right— this one’s a poke cake! We’re filling it with pudding, topping it with a homemade blueberry sauce, and then on top of that, we’re adding a delicious cream cheese whipped frosting that just takes it to whole other level.

I love the flavor of citrus. Usually I make lemon curd, or have key lime pie, but this cake brings all those flavors together in this wonderful cake.

I think I really fell in love with the flavor of lime when I went to Belize to visit a friend.She used to put slices of the citrus in our drinking water. I am not sure if it was because the water wasn’t the best tasting or if she just preferred the light refreshing taste, but it really grew on me. Even the color of the thin green slices in the water looked nice and refreshing. In the middle of a hot and humid afternoon it was absolutely wonderful.

Every time I go to one of my favorite markets I pick up an couple of limes. Margaret would be happy to know that she still inspired me after all these years.

I still love the flavor of lime and this cake is loaded with it!

I was lucky enough to have a plethora of key limes given to me and have juiced and zested my fingers down to the bone. Consequently long after the season is over I will have juice and zest safely tucked away in my freezer

Who knew zucchini could get so dressed up?

I love adding in zucchini to baked goods and if you have ever had a garden or been friends with someone who has had a garden you know that getting creative with those squash veggies is important  because chances are there will be plenty.

In fact, I know people who lock their car doors when they show up at church during the summer months, not because they are afraid of having something stolen, but for fear that someone will sneak a grocery bag full of zucchini in their back seat.

Yes. It really can be that bad. One time we were gone for a week during the summer and came home to a zucchini so big we had to carve it like a turkey.

Even picky eaters will agree that eating their veggies has never been so great.

This cake is so lemony fresh you might just want kiss your plate!

About a year after I was married, my husband and I were able to purchase our first home. I was super excited about our little yellow house with the white trim but a bit nervous about meeting the neighbors on our cul-de-sac.

I could tell there were young families in the area because I say hop-scotch games down on the sidewalk with chalk, and bikes of various sizes.

The day after we unloaded the moving truck my husband had to go to work. I was left to take care of unloading and deciding where to put things. I knew it was going to be a long couple of weeks.

A few hours later I heard the doorbell.

There, standing on my front step was a young girl with her mom. She was holding a plate and on it sat a beautiful bundt cake.

“These lemons came from our yard!” the girl said.

And that how I met one of my very first neighbors.

I invited them in and we enjoyed getting to know eash other over a lemony bundt cake. I think of them every time I make this.

This is what Jessica of Sprinkle Some Sugar has to say about his luscious cake.

It is sort of dense – think: pound cake – but it is so ridiculously soft, moist and packed with lemony flavor. The lemon glaze on top really brings this dessert over the top and really packs a big punch of lemony flavor.

WOW! I did not know there was a National Day set aside just for Peach Pie. Celebrating that one for sure!

Ever since I learned how to make a decent pie crust I have really fallen in love with pie baking! Peach pie is one of my favorites.

A few years ago I toured one of my friends’s peach orchards. She is a 4th generation peach farmer in California.
We picked peaches off the tree and that night I made a pie. It was HEAVENLY to say the least. I didn’t add ice cream or shipped topping. Just mouthful of tree sweetened peaches baked between a flaky crust.

Oh My..There is ALWAYS time for Pie!

Being able to pick fruit that has been allowed to ripen on the tree is so much better than buying it green and having it ripen on the counter in your kitchen. The sugar content is a whole new ball game when you buy fruit directly from a farmer or at a farmer’s market.

When you are making pies or jam, don’t worry it there are a few blemishes. My daughter-in-law and I just bought a box of peaches that were considered 2nds but was exactly what we needed for making jam and cost half of full price. Now I wish we had picked up two boxes so we could have made a few pies!

This is what my great grandfather used to say about homemade pies.

There are only two kinds of pie I like. Warm or cold. :~D

Quick Tip:At first I was a bit nervous about making the lattice crust but then I read that making the lattice crust helped the moisture from the fruit evaporate and helped the crust to not get soggy.

Joanna Gaines has great taste in more than just finding the right furnishings. This pie is total proof.

I loved watching how Joanna and Chip work together as a team, taking something that is ordinary and often a bit run down and doing something incredible to the point that it doesn’t even seem like the same space they started with.

That is a lot like this recipe. I mean when you have a bunch of lemons, some people look at it as tart and sour fruit, but in the right hands, they are made into something smooth, sweet, and memorable.
A pie that will long be remembered after the last little morsel is savored.

I love that this pie is done in under 20 minutes. I mean who really has all day to spend in the kitchen? Not me! No wonder this is on the Magnolia’s menu.

So the next time you happen to be in the Waco, TX area, feel free to stop into the huge Silo’s that house Chip and Joanna Gaines place of business as well as outdoor gardens and a community center. If you are not going to be in that neck of the woods anytime soon, Don’t panic…You can make this pie right in your own kitchen.

Lemon spread that is so good you might want to just eat it off your spoon.

The first time I heard about Lemon Curd I thought the person was kidding. I mean really? Who would name anything you put on toast something so yucky.

After I tasted it I didn’t care what they called it, I just needed more. Taking it a step further I decided to make my own so here is my recipe.

I couldn’t help but notice lemons in the road near where we lived. I thought a truck might have spilled some of it’s load. The next week I noticed a few more.

When I looked up, I realized there was a house at the top of a long driveway across the street and also at the top, was a lemon tree.

A few weeks later I saw a man , parked at the end of the driveway, getting his mail. I quickly ran over and introduced myself.

“Hi,” I began. “We are new to the neighborhood. I noticed you have a lot of “road-kill” lemons and I happen to cook.” Which was pretty obvious since I was wearing an apron. “I was wondering if I could pick a few lemons before they roll into the street.”

The man smiled.. “You can pick anytime.”

We quickly realized we were going to need to make one..or two more batches really soon. Thankfully the neighbors tree was full of the bright yellow citrus.

When we added a little cream cheese and spread it on a piece of fresh bread it was amazing.

One of the best things to do is find someone with a lemon tree. Introduce yourself, and remember to share.

No fuss, but all the flavor! What an awesome recipe!

The Official National Cheesecake day is actually July 30! So bummed because while I did think ahead in order to be able to celebrate National Lasagna Day, I don’t think I am going to be able to pull off the Cheesecake in time.

Oh well! I guess I will have to just announce that Anyday is cheese cake day!

My mother-in-law has a recipe for a cheesecake that is pretty darned involved. I watched my husband make it once and thought, I can buy one for less than he spent on the ingredients!

At the end of all the stirring and prep time, he took out a bottle of ale or beer and put in a healthy dose. My oldest boys went crazy for it. Me..not so much.

It was heavy and overpowering. One bite and you could feel your arteries begin to harden. It did pretty well in the pie auction, but my vote actually went to a berry concoction.

Seeing that this recipe has lemon in it and the fact that it is a no bake dessert makes me want to start singing!

This No Bake Lemon Cheesecake is possibly my favorite cheesecake ever. It is light and fluffy and creamy and just sweet enough to balance out all that tang from real lemon juice and zest. It is perfection, especially when you load it up with real whipped cream and fresh summer berries.

Such upscale taste that you might want to eat by candlelight.

Having grown up in central CA we had plenty of fresh vegetables. Asparagus was one of those vegetables that seems a bit weird, it is long and has a distinct taste, but I always liked them. We used to put a small dab of mayo on the plate and dredge the tips of the green stalk though it.

Probably not the healthiest but it worked as far as getting out kids to try new foods or eat up what was on our plates.Today, I almost can’t get enough of those tender stalk. And I don’t need mayo to coax me!

Seeing that this dish was a one pan wonder of chicken, asparagus, and a mustard lemon sauce just made planning dinner easy. The main dish and side dish are all rolled into one! m

Serve this on a bed of rice, cauliflower, or orzo, and you are ready to serve this somewhat fancy dish up!

You might want to light a few candles for atmosphere since this seems like a dish that would be served at a high end restaurant. Well, at least not an eatery where small toys come in a boxed kids meal :~D

Serve the lemon chicken & asparagus over a bed of rice/cauliflower rice to soak up all the saucy goodness and enjoy! Bright and punchy lemon garlic flavors with a tangy, mustard bite – what’s not to love?

I remember when we were kids, my mom used to always have something in the cookie jar. Oatmeal, chocolate chip, and peanut butter cookies were pretty standard fare.

Every once in a while she would bake a pan of these lemon bars. You knew it was a special occasion.

The shortbread type crust and the melt in your mouth filling was the perfect combination. I loved the tangy citrus flavor, I still do! And being able to add some color to the dessert table was always eye catching.

Being able to serve these up makes any party is great because even though they feel a bit on the fancy side, you still can skip the plate and silverware. Which can be nice.

With a cup of coffee they really hit the Sweet Tooth spot.

Bakers, start your ovens! Because this recipe is from Ina Garten, the Barefoot Contessa. It is sure to know your socks off!
