I love Both Mexican and Italian food. Seriously, I can’t really pick one over the other, so when I saw that this recipe was a mix of both..Well, let’s just say I was over the moon thrilled!

Plus, I am such a huge advocate of time saving tricks in the kitchen. Being able to cook up a large package of hamburger and use it for several meals is such a huge plus. When ever I buy lasagna noodles there are extra..now I can plan to make this dish as well!

Because we are getting smaller in number as the older kids move out, I am having to adjust my cooking style. Seriously I used to make TWO 9 x 13 pans of  whatever we were having for dinner.

Now with only 3 of us left at home, I need to be a bit more strategic. Being able to make dinner and freeze half really cuts down on the work and it is great for being able to take left-overs for lunch.

I may be biased here, but I’d say this was probably my favorite lasagna ever. And I did not slave over it for an entire day! Only took me a few minutes to make the sauce and half an hour in the oven. Did I mention I didn’t boil the noodles? Yeah, this lasagna will fool everyone into thinking you slaved all day in the kitchen, and let them think that!

Quick Tip: If you don’t have a can of  taco skillet sauce.. I don’t even know what that is! Go ahead and add a package of taco seasoning to the meat sauce.
