When I Made This My Husband Was Afraid He Forgot Our Anniversary

My husband isn’t a huge romantic, but when I make a big bowl of this I am totally speaking his love language! I know that no matter what his day at work was like, as soon as he takes a big bite of this, all his troubles just melt away.

What is it about the classic potato salad that people love? For me it is the taste, texture, and the fact that my mom made this every time we went camping with our grandparents and all our cousins. For my husband I think he just loves the fact that it is made from scratch.

The simplicity of this hearty dish just brings back great memories of summer time and the fact that is literally goes with anything you can put on a grill makes this a super functional side dish is a huge bonus. I always have to make a huge batch because my husband eats this up for snack if there is any left in the fridge. Plus, one of the main ingredients is potatoes, making this as budget friendly as it is tasty!

I know that Russets are the standard and cheapest spud on the market, but our family loves the Yukon gold potatoes. I buy the big bag at Costco because I know they will all get eaten one way or another.

Quick Tip: If you are not a fan of sweet pickles, go ahead and swap out relish for dill relish. Seriously. I had no idea that existed until recently when I accidentally picked up a jar!
