All the Tamale Taste in one hot dish!

Sometimes my recipes turn out delicious, but definitely not something that would grace the cover of Bon Apetite.

Instead of making this in once big dish I decided to try something a bit more creative.

I divided this recipe into individual ramekins! Each serving was just the right size and could be served piping hot on a plate with beans and rice. How adorable is that?

I love that this recipe also used a cornbread mix. It is something I usually have on hand.

Trust me on this one, having a casserole that mimics the flavors of a tamale is golden! I took a tamale making class once and it was so much work.

I used rotisserie chicken in this dish, and it only took minutes to assemble. I served it with some lime wedges and black beans. You must squeeze a lime wedge over this dish (and the black beans). It gave it a little zing and really put the flavors over the top. I am adding this to our dinner rotation. You should do the same.

Quick Tip: I love that you can buy a rotisserie chicken at Costco for less than 5.00! Perfect to use in this recipe if you are short on time!
