I love making these with our kids. I try to have all the food prepped and in separate bowls, then have as many “egg rollers” as possible. It is a great way to teach them how to create something and be able to enjoy something that they helped make.
Baked Southwestern Egg Rolls
YIELD: ABOUT 15 EGG ROLLS
- 1 pound ground chicken or lean beef
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 (15-oz.) can black beans, rinsed and drained
- 1 cup corn kernels (if frozen, thawed)
- 1/2 cup shredded Mexican blend cheese
- 12 square (7-inch) egg roll wrappers
- Olive oil or cooking spray, for coating
- OPTIONAL -Guacamole or salsa, for serving
DIRECTIONS
- Preheat the oven to 425°F. Line a baking sheet with parchment paper or silicon liner.
- Thoroughly cook ground chicken or beef in a medium nonstick pan over medium-low heat. Crumble.
- Add the garlic powder, ground cumin, chili powder, salt and pepper and cook, stirring, until combined.
- Transfer meat mixture to large bowl.
- Stir in the black beans, corn and cheese.
- Arrange the egg roll wrappers on a dry work surface so that the corner of each wrapper is closest to you. Add a small amount of water to a dish.
- Place 1/3 cup of the chicken mixture in the lower third of each wrapper then beginning at the bottom, roll the wrapper up and fold the edges inward.
- Before your final fold, wet your finger with the water and apply to the edges.
- Roll the wrapper shut, pressing lightly to seal the edges together.
- Arrange the egg rolls, seam side down, on the baking sheet then brush them lightly with olive oil or coat them with cooking spray.
- Bake the egg rolls for about 15 minutes or until they’re golden brown and slightly crisped.
- Remove the egg rolls from the oven and serve them with guacamole or salsa for dipping.
Quick Tip: If you have worked with Egg Roll Wrappers before then you know the drill. If not, don’t panic. It is really easy and there is a a diagram on the package of the wrappers. I have had my kids help me since they were young. It really is that easy.
