Why or why are most of my favorite foods heavy on the calorie side? It is just the way life goes sometimes, but this recipe is rich and flavorful. I am definitely going to add this to my Mexican Dinner night!

Even if calories aren’t a concern for you..well first of all congratulations.. but it is great to have a few recipes that you can serve up to guests or take to a potluck. Not only does this highlight chicken instead of beef, being able to replace the flour tortillas with corn tortillas also is a big bonus.
In fact, I am wondering why I didn’t think of this sooner!

I know I am always talking about cooking ahead, but it just makes my week go so much smoother. When we had all six kids at home I used to dread the dinner hour because I was always running someone to or from someplace or helping with homework. Being able to just put something in the oven was a life saver. Having food prepped ahead sometimes made the difference between having a hot meal, or pouring a bowl of cold cereal. Yes, that did occasionally happen.

So plan ahead to make this yummy south-of-the-border dish and pick up a big tray of chicken! Cook it all up and put an extra pan of this in your freezer with cooking instructions on top.
Wehn you know you are going to have a full day, just pull this out the night before and defrost in the fridge.

No Fuss..no Guilt..LOTS of flavor! I guess this is a Win-Win-Win!

I love being able to throw something together but if you are watching your calories it is easy to end up consuming more than you had hoped. I mean the cream sauces and cheeses just rack up the calories and fat, but then along comes a recipe like this one. Sensible, yet slim.

I will be honest with you, I am not the biggest fan of ground turkey. It isn’t the flavor, it is the texture that just doesn’t sit well. But I love chicken sausage and ground chicken so I am using that instead.

Actually if you have some venison in the freezer that needs to be used, this would be a great recipe for that.

This casserole is full of spices, vegetables, and lean protein. So go ahead. Have seconds! This is the kind of food that really will make you big and strong..just like mom used to promise when coaxing you to eat something new.

Dara knows what it takes to make meals that boast high flavor without the fat. she has lost over 60 pounds by changing the way she eats and ramping up the exercise.

Congratulations Dara! What a huge accomplishment and lifestyle change.

Everyday is worth celebrating. Make this TODAY!

Pancakes were pretty standard in our family when I was growing up. In fact my dad was the Pancake King and and could make any image, shape, and object into his rendition of a pancake.

Some, I have to admit, looked amazing and we loved seeing what he came up with. Others looked a little on the Picasso side, but trying to guess what was on our plate before we poured on the maple syrup was always the best part.

Crapes are something we rarely had. I am not sure if it was because they were more of a dessert than a breakfast, or if my dad could’t make shapes out of them. I am a huge fan.
With strawberry season in full force, seriously just bought several baskets on sale at the grocery store for 99 cents each, who can resist making things that highlight that amazing fruit!

My daughter, Emma, is an awesome crepe maker. I think this recipe is one that she would totally approve of, in fact, I think I will surprise her and make some for their family the next time they visit!

When I found this recipe for strawberry filled crepes I decided to share it as is. I will often add a splash of white wine or a nice Pinot but as far as liquer, I will leave that up to your personal preference. Leave it in. Take it out. Whatever floats your apron up run with it.

These Crepes….these crepes! These Crepes with their hint of Vanilla…and those Strawberries with the hint of Orange liqueur, and that cream with a hint of love; have been all I can think about… I’m so in love with Strawberries and Cream.

Quick Tip: If strawberries are not in season, go ahead an replace with other fresh fruit or even a mix of fruit. Imagine raspberries and blueberries! Not sure how to say Yummo in French!
