What happened to summer! I mean we should still be buying stuff for S’mores not stuff for backpacks.

I remember that school didn’t start until after the Jerry Lewis telethon.

Raise your hand it you remember that? Thank you. I see those hands wildly waving in the back.
Now, the school where our kiddo attends is starting in the middle of August! Goodbye summer days, hello weeknight routines!

Part of that routine is having a good meal plan. I need to know what we are having way before the kids ask that dreaded question..”What’s For Dinner?”

The other thing I don’t love during the busy nights of school activities is a huge dinner mess. Planning ahead helps with that as well. This One Pot dinner is one of those bare bones recipes that you can add to. Kind of like a blank canvas!

So go ahead. Plan to make this, but then add in the things your family loves such as olives, hot sausage, corn, you name it.

Help make dinner time a time to reconnect. A time to celebrate the little things, and a time to reflect on what is truly important in our lives.

Here is what Milisa has to say about this pasta dish.

This one pot pasta is easy to customize with your favorites. You could sub in ground beef or chicken for the Italian sausage and mushrooms, peppers, onions or spinach would be great additions.

Quick Tip: Keep the ingredients handy for this super easy supper. Show your kids how to make it. If you are not home, they can feed themselves. Doing their own laundry so their new t-shirts aren’t pink..well that is a whole other ball of wax my friend. Best of luck on that!

I have made the same lasagna recipe since I was old enough to boil noodles. This NO-BOIL option changed everything!

My mom made lasagna a certain way, and I am pretty darned sure she learned how to make it from her mom. It was always delicious, always a hit, and always a big mess.  I used all my big pans and had so much boiling going on. It was totally worth it, don’t get me wrong, but it was a commitment.

Then, my daughter had a group of friends over for a few days and they decided to make dinner. One of her friends, Emarie, took on the task of making a lasagna. When she pulled the ingredients out of her grocery bag I was skeptical. Really skeptical.

After all, that is not how I made the traditional pasta, or my mom. Really, if you are not going through all the work, can it really be authentic? But it was! It was actually BETTER than the recipe my mom passed on. (Nothing personal MOM. Just stating the fact.)

I have made lasagna twice as much after finding this No Fuss recipe and I hope you love it as much as I do.

This is what the Cento family, makers of Anna Noodles, has to say about my favorite recipe.

This comfort food favorite layers robust tomato sauce, ground beef and a mozzarella-ricotta cheese mixture between sheets of pasta. This baked dish is perfect for everything from busy weeknight dinners to parties and entertaining.

Quick Tip: If you would rather not use beef, go ahead and swap out for ground chicken. I LOVE being able to use chicken sausage.

Rolling up these noodles is a whole new twist to this favorite dish.

I have basically made the same lasagna recipe for years. I don’t even need to follow directions because I really never had any. I just watched my mom growing up as she layered the noodles, cheese, meat and sauce.

It was such an amazing aroma as the cheese began to melt and the tomato sauce cooked together with the onion, garlic, and Italian spices. Yummo!

When I saw these rolled up lasagna noodles I thought it seemed a bit odd. It reminded me of driving through farm country where instead of rectangle cubes of alfalfa there were huge round bales. But the more I though about it the more I realized it is a brilliant serving size idea.

Face it, lasagna isn’t always the prettiest thing after it is served onto a plate. Plating these for a larger crowd is super easy and a nice twist on an old favorite.

And this uses chicken. For those who lean more toward poultry instead of beef, it is nice to have recipes that appeal to the masses!

Here is what the cooks at Kraft Foods have to say about their brilliantly simple recipe.

Prepare to amaze with Spicy Chicken Lasagna Roll-Ups, a new twist on delicious lasagna.

Quick tip: If you are making another chicken dish, go ahead and make a little extra chicken and shred 3 cups. Put into a freezer bag and have this ready for a meal down the road. So quick to put together when the ingredients are pre-prepped!
