Great alternative to potato salad or coleslaw.

I am not sure what it is about macaroni, but I always think of it as something to be served hot and with plenty of cheese.

This recipe has definitely caused me to stop and reconsider. With a variety of color and texture, it is full of all the things I love in a potato salad, without having all the hassle of boiling, peeling and cutting up the spuds.

When you have a bunch of kids you end up going to a lot of picnics and get-to-gethers. Sometimes the thought of making one more dish can be overwhelming. It is nice to have a handful of recipes that are easy to make and most likely you already have the basic ingredients on hand. This is one of those recipes.

Plus, if you have put your families’ favorite ingredients in this macaroni salad, chances are your kids will make sure they get a scoop on their plates before running off for their next activity.

Voted One Of The Best Potluck Recipes Ever

I was so glad when I came across this recipe on the internet. I almost forgot about it.

I remember when we were visiting our friends, Bob and Ginger, and she fixed it for us along with a garden fresh salad and loaf of garlicky french bread. In fact, our kids even asked for a second helping.

Spaghetti is such a dinnertime staple, but being able to pop it in the oven and forget about it was something that really caught my attention, because instead of boiling spaghetti noodles as everyone was arriving, Ginger had the pan of piping hot goodness already in the oven so it was really easy to serve up hot after everyone gathered around the dining room table.

Getting together with Bob and Ginger felt more like we were with family instead of friends. And now, even though we live two time zones apart, I still think of them everytime I make this yummy meal!

This is one of those recipes that is easy to freeze for later, or to take to someone who may need a hot homecooked meal.
