Such upscale taste that you might want to eat by candlelight.

Having grown up in central CA we had plenty of fresh vegetables. Asparagus was one of those vegetables that seems a bit weird, it is long and has a distinct taste, but I always liked them. We used to put a small dab of mayo on the plate and dredge the tips of the green stalk though it.

Probably not the healthiest but it worked as far as getting out kids to try new foods or eat up what was on our plates.Today, I almost can’t get enough of those tender stalk. And I don’t need mayo to coax me!

Seeing that this dish was a one pan wonder of chicken, asparagus, and a mustard lemon sauce just made planning dinner easy. The main dish and side dish are all rolled into one! m

Serve this on a bed of rice, cauliflower, or orzo, and you are ready to serve this somewhat fancy dish up!

You might want to light a few candles for atmosphere since this seems like a dish that would be served at a high end restaurant. Well, at least not an eatery where small toys come in a boxed kids meal :~D

Serve the lemon chicken & asparagus over a bed of rice/cauliflower rice to soak up all the saucy goodness and enjoy! Bright and punchy lemon garlic flavors with a tangy, mustard bite – what’s not to love?

Primavera means Spring in Italian. So with the season upon us, it’s the perfect time to prepare this classic dish for you and your family.

The secret to getting the best color and flavor is that in Spring you can get the freshest vegetables of the year.

I have to admit that I’m a huge pasta fan. The minute you say pasta I’m already sold. On those nights my family does eat out its usually Macaroni Grill where I love to order the Italian Pasta Bake.

However, I’m more of a red sauce then a white or, in this case, saffron sauce fan. So when I first this saw this recipe I was a little bit skeptical. Oh my god was I wrong.

Skip The Drive-Thru..This Meal Is So Amazing Your Kids Will Thank You!

There was a time when we had three kids on three different soccer teams and one in football. Every day felt like an Olympic event just getting to where everyone needed to be with the right gear.  Plus, John and I were both helping coach two of the soccer teams. Don’t be impressed; I was helping with the 6-year-olds! We had practices Mondays through Thursdays, a High School Football game every Friday and three soccer games on Saturday.

By the time I got home, I needed to get dinner on the table FAST to feed my hungry sports enthusiasts before they started to riot in the driveway.  Getting dinner on the table is one thing but after a long hectic day who wants to deal with a huge clean-up?

I love the way the creamy rice and chicken team up for this meal, tasty enough to fuel even the pickiest goalie. Being able to add a side salad makes this meal a real winner!

This “one-pan wonder” is off the charts as far as I am concerned, it is delicious and with only one pan to clean, this hit dinner prep out of the park :~)
