Everything Is Better With Bacon!

My husband works in the construction trade so is often having to leave super early in the morning as 1:00 A.M. depending on the concrete pour schedule. So as you can imagine he sometimes need to go to bed super early. Way earlier than I usually have dinner ready for the rest of us.

Being able to start this in the afternoon and know it will be ready is a great help!

SLOW COOKER CROCK POT BACON MACARONI AND CHEESE

INGREDIENTS

  • 3 cups elbow macaroni
  • 4 strips bacon
  • 3 tbsp buter
  • 2½ cups shredded cheddar cheese
  • 1 can cheddar cheese soup
  • 1 cup milk
  • salt and pepper

DIRECTIONS

  1. Coat crock pot in non-stick spray.
  2. Combine all ingredients in the crock pot and stir together.
  3. Cover and cook on low for 2 hours, stir every half hour to evenly distribute the cheese.

Quick Tip: No everyone loves cooking with condensed soup so here is a recipe for a substitute. In fact this looks so good I might use this as a base for broccoli cheddar soup!

Condensed Cheddar Cheese Soup Substitute:

1 tablespoon butter 3 tablespoons all-purpose flour 1 cup fat-free milk 1 cup shredded 2% cheddar cheese salt, to taste Melt butter in a saucepan over medium-low heat; add flour and a bit of the milk; whisk until smooth and bubbly.
