Some days are so hectic, the thought of making dinner just pushes me to the brink of tears!

I don’t know about you, but it seems that on busy days the last thing I want to do is get out pots and pans and cook something up.

Seriously, there have been plenty of nights when we have had cold cereal or instant oatmeal. Having an off day every once in a while is normal but having a plan for tossing together a good meal can be easier than you think.

I love that basically, everything in this recipe are things I can keep in my pantry or fridge.

While this is a great meal, the best part is, being able to put something together with minimal clean-up so you can spend less time in the kitchen and MORE time around the table.

This creamy sauce with the tartness of sun dried tomatoes really puts the Ahh in Ahhmazing!

Chicken breast sauteed with garlic in a delicious Asiago cheese cream sauce, perfectly complemented by spinach and sun-dried tomatoes! Comfort food made with fresh ingredients.

Quick Tip: If you don’t have 1/2 and 1/2 you can mix milk and cream together. If you are looking for a low-fat option just use whole milk.

I have made the same lasagna recipe since I was old enough to boil noodles. This NO-BOIL option changed everything!

My mom made lasagna a certain way, and I am pretty darned sure she learned how to make it from her mom. It was always delicious, always a hit, and always a big mess.  I used all my big pans and had so much boiling going on. It was totally worth it, don’t get me wrong, but it was a commitment.

Then, my daughter had a group of friends over for a few days and they decided to make dinner. One of her friends, Emarie, took on the task of making a lasagna. When she pulled the ingredients out of her grocery bag I was skeptical. Really skeptical.

After all, that is not how I made the traditional pasta, or my mom. Really, if you are not going through all the work, can it really be authentic? But it was! It was actually BETTER than the recipe my mom passed on. (Nothing personal MOM. Just stating the fact.)

I have made lasagna twice as much after finding this No Fuss recipe and I hope you love it as much as I do.

We always called this “Poor Man’s Stroganoff” because it was made with hamburger. It is friendly on the budget but rich on flavor!

You know you have a winner recipe when your kid comes home from the Army and asks you to make his favorite meal, Poor Man’s Stroganoff!

I have changed it up a bit over the years. Sometimes I add fresh Rosemary, sometimes I toss in sliced mushrooms, or even diced bell pepper, but basically it is always the same and I think that is why it is one of Scott’s very favorite things to eat. It reminds him of home.

This is also a super easy recipe to teach young chefs in the making since it is so basic.

Being able to cook, when your kids leave the house is a big deal, maybe even bigger than you think so give them several recipes to perfect. It will be nice to know they can cook for themselves.

This is what Jamie of Love Bakes Good Cakes says about her budget friendly recipe.

For nights when I need dinner lightning quick (and let me be honest by saying, or those nights when I feel lazy!), I use canned cream of mushroom soup. However, I have had just as great of success with making my own cream sauce – and I have provided BOTH options for you! If you don’t mind canned soup, feel free to use that shortcut. If canned soup is not your style, no worries there either – the from-scratch sauce comes together quickly and easily!

I just came home after a long day of cooking. I was helping a friend who had recently had a baby get meals put together and in the freezer for later. We had pans of food cooking, simmering, and boiling. I chopped, cut, and assembled. In the end we had several meals that she will only need to pop in the oven and BAM. Dinner!

I wish I had thought to take this recipe along. Being able to cook up enough chicken for several meals and do all the chopping at once really saves time later on!
I usually don’t think to make something with bacon and ranch dressing mix, but I am totally going to have to try this. I think my family will love it and I think yours will too.
