In 30 minutes You Could Have This Main Dish On The Table

Having your kids help put dinner on the table is a great way to enlist help. But, also remember to have your kids help clear off the table and load the dishwasher. It is very important to teach them how to clean up after themselves and be accountable to helping work as a team.

Having simple recipes on hand also is a great way to introduce your kids to meal planning. Have them help shop and keep track of how much is spent for each meal and then divide it by servings. This is a life skill that they will thank you for teaching them after they move out on their own.

CREAMY PARMESAN GARLIC MUSHROOM CHICKEN

Ingredients:

  • 4 boneless, skinless chicken breasts, thinly sliced
  • 2 Tablespoons Olive oil
  • Salt Pepper
  • 8 ounces sliced mushrooms

Creamy Parmesan Sauce

  • ¼ cup butter
  • 2 garlic cloves, minced
  • 1 tablespoon flour
  • ½ cup chicken broth
  • 1 cup heavy cream or half and half
  • ½ cup grated parmesan cheese
  • ½ teaspoon garlic powder
  • ¼ teaspoon pepper
  • ½ teaspoon salt
  • 1 cup spinach, chopped

Instructions:

  1. In a large skillet add olive oil and cook the chicken on medium-high heat for 3-5 minutes on each side or until no longer pink in center.
  2. Remove chicken and set aside on a plate.
  3. Add the sliced mushrooms and cook for a few minutes until tender. Remove and set aside.

Sauce

  1. To make the sauce add the butter and melt. Add garlic and cook until tender.
  2. Whisk in the flour until it thickens.
  3. Whisk in chicken broth, heavy cream, parmesan cheese, garlic powder, pepper, and salt.
  4. Add the spinach and let simmer until it starts to thicken and spinach wilts.
  5. Add the chicken and, mushrooms back to the sauce.
  6. Serve over pasta or rice if desired.

Quick Tip: This is a great meal to take to someone who could use a little home cookin’. It is easy to reheat.which also means it is great for Left Overs! Woot woot!
