You can buy cooked, chopped chicken, but I like to bake my chicken earlier in the morning. I usually line a cookie sheet with foil, add some chicken breast and drizzle a little bit of olive oil and lemon pepper. I cook at 400 degrees for 35-45 minutes (depending on the thickness of the chicken breast). I let it cool and then chop it up real quick.

Quick Tip: You can substitute veggies such as chopped broccoli, zucchini, and fresh beans for the celery.
