You Had Me At Lombardi.

When I heard this this recipe was called Beef Lombardi I knew it had to be good.

I clicked on the photo and noticed that I already had all the ingredients I needed in my fridge or pantry. How lucky is that!

Usually you can’t freeze recipes with sour cream, or at least that is what I always believed to be true so have shied away from making too many things I couldn’t freeze, but this recipe says it freezes well so I am going to give it a whirl!

The bottom line it that this dish is the bomb and with a teen playing football and coming home super hungry after practice or Friday night games, I love being able to have something that is protein and carb rich to fill him up and fuel him up.

This can be made in a big casserole dish OR buy a jumbo muffin pan and make several individual servings that you can freeze wrap up in saran wrap and take out when you need something fast and nutritious.

Heck, I am going to start doing that now for those late nights when he needs something more than a bag of chips.

Learning to modify recipes for a changing family size is a big deal. A recipe like this one really makes it easy to do.

This is what my kids tell me when I plan ahead and have food ready to go.
