Can you really think about eating a nice juicy burger without fries on the side?  Not me!

One of our favorite places to grab a quick bite is In and Out Burger. Our son works there now so we have plenty of reasons to swing in. Ordering a number 3, grilled onions with peppers, protein style hits the spot every single time. I love that everything is fresh and hot. Just like when I make food at home.

Even if I don’t order fries when we stop at our favorite fast food burger place  I still find myself sneaking a few off my husband’s tray. Usually he just goes ahead and order extra fries because he knows that I can not eat just one ..or two..of three.

I have made baked fries a few times and it never seemed as good as I hoped, but this recipe is totally different. This recipe addresses why baked fries tend to get a bit soggy. And really, who wants a soggy fry?

Learning This Easy Recipe Made Camping like a Perfect Stroll Through the Forest.

Several years ago my husband and I were taking our young kids on a big camping trip. It was a nightmare just packing.
I looked at the rough totes that had been loaded with supplies, food, bedding, cook wear, well you get the basic picture.
“This isn’t a nature experience,” I grumbled, shoving a bag of marshmallows into one of the totes. “This is more like moving!”

I was pitching something and let me tell you it wasn’t a tent.
“I thought you loved camping as a kid,” said my husband John, picking up the sleeping bags to carry to our old Suburban.
“I did,” I fought back the tears. “But,my mom did the packing!”

It was a miserable beginning of the trip. There was a hole in the air mattress and I found myself sleeping on the hard ground in the middle of the night. Everything was dirty within 7 minutes of getting to the campground. Trying to make a huge breakfast of hash browns, pancakes, eggs, was a mess that took until lunch time to clean-up.

What was I doing wrong? I wondered. Our kids were having a blast, just like I used to when I camped with my grandparents and cousins.
I tried to relax and enjoy the moments, but all I could think of was how long it was going to take me to clean up everyone and everything.

Then it hit me. I had been making camping TOO big of a deal. I over packed, over estimated, over stressed and the result was pure misery.
I decided to simplify. Before we went camping again I tried several foil wrapped meals on our barbecue to make sure we had some winners.
The fact that the kids could make their own packets with their favorite fixings was awesome.

Most of may know I attempted camping a few months back and it was not quite what I was expecting. Needless to say I didn’t run out a buy a new RV but what I did take away from the trip was a easy campfire potatoes recipe. Don’t tell anyone but I have made them on grill since we have been home a few times. They are so easy and good.

Quick Tip: Make sure to have your family make their own packets so they can include their favorite fixings. Mark the outside of the foil packet with their name in permanent marker. It just makes life easier. Really.

Make “The Other White Meat” for dinner tonight. No Hobby Farm Required!

In 1990, our family moved from CA to MN and lived in a small midwest town for nine years.  When we first moved there, we purchased a small hobby farm. The old farm site had several outbuildings, including an old grain mill, a milking barn, and a pig barn.

Well, we weren’t planning to tackle the effort of getting a cow or planning to plan wheat, but because the prices were down and we were young enough to feel optimistic about everything, we decided to buy a few piglets and raise them for market, keeping one for ourselves.

Long story short, we ended up with 50 piglets that we raised to butchering weight. That is a lot of food and after cleaning up the barn several times, well, let’s just say that whatever goes in must come out.

Even just walking through the barn left your clothes and hair smelling like Eau de Piglet.

In the end, we were able to sell all the pigs at the highest market price because of what we had fed them. They were big, but they were very lean. Now that we have lived through that, I appreciate paying for a few pounds of pork we didn’t have to raise ourselves. There is always an adventure in learning something new, but sometimes it is easy to bite off more than you can

My Family Couldn’t Get Enough Of This!

My Aunt Betty and Uncle Bill would often talk about stopping into the home-style restaurant on one of their car tours as if it was one of the highlights of the trip. When I asked what restaurant it was they exclaimed, “Cracker Barrel!”

I remember traveling across the country with our kids in a big Suburban one summer to visit friends in the midwest and experience some of our National Parks. Being from California we had heard of Cracker Barrel but had never been to one.

We had been driving for hours and finding a place to pull over for a hot meal was something we looked forward to as much as getting out of the car.

When we spotted the Cracker Barrel sign, we knew it was time to stop. Boy were we glad we did, their southern style of hospitality was as amazing as the comfort food on their menu!
