Every Day Should be Fajita Day!

I can’t believe I almost missed it! National Fajita Day is every August 18th but seriously, at our house we could eat that sizzling multi functional meal several times a week!
I love being able to tuck the hot onions, bell peppers and marinated chicken or beef into a tortilla of putting the fajita filling right onto a bed of crisp lettuce.

In fact, I have been known to cut up left over fajita filling and toss it in scrambled eggs for a breakfast burrito. You just can’t go wrong when you start out with fresh ingredients. With Red, yellow, orange, and green peppers, this dish is just as pretty as it is tasty!

Have you been to a Mexican restaurant where they bring the fajitas out in a hot skillet? You can hear the popping and smell the sizzling aroma before they even put it in the center of the table. It is just so good that you can’t stop eating it.

Make this ahead for your Nacho or Salad bar lunch or dinner. You might be surprised what a hit it is, and with minimal clean up you can spend more time dancing the Flamenco and less time doing dishes! So get your sizzle on.

This day only happens once a year.. but if you make it all through the rest of the year, well let’s just say Viva La Fajita!

The first time I made these beef fajitas, my family couldn’t get enough. The next time I had to make a double batch so everyone had enough. This is a favorite evening meal for me because it fixes up quick. It would be a good one for entertaining, too—the avocados add a nice dash of color. —

Quick Tip: Partial to chicken? Go ahead and swap out the beef for poultry..or make a batch of both and let your guests decide which they would prefer!

I used to think that marmalade was for putting on lightly toasted English Muffins, but boy was I wrong!

The fact that I love making orange marmalade from scratch and canning it make me even happier, especially since I have a pantry shelf full of this citrus jam.

While looking up recipes for one of our favorite Take-Out places I also can across a huge hack on how to have crispy chicken without frying. If you are watching your calories, this is a huge plus.

This is what Michelle of Crafty Morning had to say about this easy and pleasy chicken recipe.

 My most recent favorite restaurant for orange chicken is Panda Express (YUM!) I have tried a few copycat recipes that used orange juice and I just hated them.I think even adding some pepper flakes for some heat would make it better!
