If You Grew Up Eating Campbell’s Mmm-mm-Good Soup, You Will Love This

I was perusing the soup isle at the grocery store the other day because I needed a can of cream of chicken soup. When my eyes landed on the Bean and Bacon soup I just couldn’t get it out of my mind. I loved eating Bean and Bacon soup when I was a kid, it was so creamy and satisfying. I almost picked up a can but when I saw how much it cost for what was sure to be one meal I hesitated. I knew I could make a whole pot of soup for my family and have enough for leftovers if I made it myself, and even though I grew up on the taste of the Campbell’s version I know that anything made fresh tastes so much better and is better for you.

Boy was I right. This soup is really easy to make and is so delicious that I am already looking forward to making it again. There is something about a bowl of this, cupped in your hands, that just warms you to the core. So while the commercial jingle says “Mmm..Mmm..Good.” I am now singing a new tune that states “Ahh Ahh Amazing!”

I love that this uses canned northern beans, but for you die hard Insta-Pot chefs, go ahead and start with dry beans and cook them up first. Talk about stretching your food budget dollars.

Bring On The Chili Weather!  Pun Intended

What is a busy mom to do when dinner time rolls around and EVERYONE is hungry? Well, try this dish and watch your family eat it up. I love a hearty meal that you can create in a hurry and with simple, yet hardy ingredients. Really, it comes down to just taking a few moments to sauté the onions and fresh garlic before adding in the carrots, browning the beef and adding the pinto beans. Really, this is the perfect comfort dish that reminds me of my husband’s favorite food. Chili beans and cornbread. Seriously, he could eat it every week if I made it for him. The fact that this cornbread is baked right on top means no more dry cornbread for my family!  I love the fact that this is cooked in one dish, which means the clean-up is fairly minimal.  So, whether you are looking to take something to a cabin or just want a hearty Game Day Dinner, this Cornbread Chili Pie is a perfect dish.

And for more of a Southwest flavor go ahead and add in some diced fire roasted hatch chilis and a can of corn.  That really helps to stretch this dish out and if you are lucky, you might even have some for left overs.

If You Love Tomato Soup, You Are Going To Flip Out When You Taste This

I never knew how much I loved tomato soup until several years ago. My mom used to use the canned soup in recipes but she never made it to serve as a soup. I hadn’t really tried it until I was an adult. I just remember the first time I tried it at my favorite restaurant. It was the Soup of The Day so I figured it couldn’t hurt. But, after only one spoonful I knew I loved it. Seriously! On a chilly day there is nothing like that creamy soup that just warms you up from the inside out. I love adding in a few spoonfuls of my favorite salsa to heat things up a bit more and a small dollop of sour cream on the top to stir in.

I guess I had never thought to make this from scratch, which is hilarious since I make everything from scratch, including marshmallows!  Ree Drummond takes this recipe up a notch by making adorable croutons to float on top. They remind me of a smaller version of what I make for French Onion Soup.  Ree goes the extra mile in so many of the things she does. I hope one day I will have the opportunity to visit her Mercantile Store, because if it is anything like she is I am sure it is down home, practical and very personable.

Quick Tip: If you are having a huge crop of tomatoes and are not sure what to do with them, consider lightly rubbing with oil, cutting them in half and placing them cut upside side down on a baking tray to place under broiler until blistered. It is a great roasted tomato taste.

Dinner is a Snap When You Use Your Crock Pot!

Busy night? If you are like most families, just being able to sit down at the table is a huge task, trying to get something made and on the table is close to impossible. Sometimes we are too tired to think about dinner. Or the mess. We just need to have it ready for us and with this recipe it can.
Literally this gets made up and put on for 3 to 4 hours and it is hot and ready.

You can actually go ahead and load up your crock-pot the night before so in the morning all you have to do is turn it on.

I am thinking this would be a great lunch for a Sunday afternoon, or top take to a potluck. And served with a salad and crusty Sourdough bread I can’t imagine anything better.

I know it seems like a lot of food in this recipe so feel free to cut it in half if you need to, or plan to take a serving to someone who could use a little TLC.

Heaven knows I need it every once in a while and others do as well. the other day I took a small meal to someone whose husband had been sick. She was so grateful and it was really not a bother at all. A little tater tot love can go a long way that’s for sure.

Having A Ladle Of This Made Me Feel Loved and Cared For.

I had been in Northern California for over a month with our three youngest kids. Our son was given an intern at the small airport where his Civil Air Patrol met and it just worked out for me to pack up the kids and go for the whole summer.

At the end of summer we returned from the small cabin we had rented in the Sierra Mountains back to Southern California. Ii was over eight hours of driving in our very crowded Camry. To simply state that we were tired would be like saying the Olsen Twins are thin.

After we got over the Grapevine we were going to stop at my brother’s home. He was expecting us.

I was looking forward to seeing him and I think all four of us were anxious to get out of the car. But, I totally did not expect to be wrapped in the aroma of what he had simmering on the stove when I walked in the door.

I felt so loved and comforted from my head to my flip-flip wearing toes. “What is that?” I asked hi after a hug.
“Meat and Peas,” He responded. It still needs another hour and then it will be ready.”

So worth waiting for.

Even though this recipe is ridiculously easy, and each one of you probably has their own version of it, it’s all the random flavors that totally make it. Beef, peas, tomatoes, onions… the combination is SO GOOD!

Quick Tip: I actually cook several strips of bacon in the ditch oven until crisp. Remove to paper towel and use drippings to braise the meat in. Right before serving I crumble the bacon and add to top.

Nostalgic and delicious. This dish really brings back happy summer memories.

Every summer my dad’s side of the family had a big Family Reunion. It changed locations over the years and us kids, who used to go swimming afterwards all grew up and started having kids of our own. But one thing that has not changed are the long tables of some of the best cooking ever.

Homemade cherry cheesecakes, baked beans, potato salad, and Grandma Miller’s Chicken and homemade noodles.

Not just egg noodles like what you buy in the store, but floured dough noodles that were a labor of love.

She would mix the dough, then roll it out really thin, and eventually make small thin strips that would be dropped into the boiling broth.

It was one of those things that you couldn’t get enough of and knew that family reunion wouldn’t be the same without them.

This recipe is almost the same. Except instead of noodles the dough is cut into squares. So much easier, without compromising on the flavor.

A yummy cross between two of our family favorites! This recipe has all the flavor, without all the calories.

I am always trying new muffin recipes that are hearty, healthy, and will help fuel up our family. With this cross recipe, I think I found a winner! Plus, it is a lower calorie version of many of the muffin recipes I have tried.

Being able to replace half the oil with unsweetened applesauce really helps to keep the muffins from being heavy and dense. Because these muffins are full of carrots, apples, and raisins, they are perfect for a quick snack.

My husband, John, works in the construction industry. He often eats breakfast and starts his day long before the sun comes up. Needing a healthy mid-morning snack is something I try to pack in his lunch. Having muffins that pack well are a big hit.

Adding raisins or dried cranberries to a batter is not anything new, but this is the first time I have ever soaked the dried fruit before adding it. I loved how it turned out.

Quick Tip: If you have bananas that are starting to get freckled and are beyond eating. Try mashing up and replacing the applesauce.
