This Is the Recipe My Kids Ask Me To Make Every Time They Come Home!

Sometimes it is crazy to see the prices when you are shopping. I have seen top sirloin cheaper than ground beef. So, I purchase a chunk of the lean meat and ask the person at the meat counter to grind it up for me. They can do that! So much cheaper and you know exactly what is in your dish.

Poor Man’s Stroganoff

Ingredients

  • 1 lb. lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 can (10-3/4 oz.) condensed cream of mushroom soup, undiluted (see note below)
  • 4 oz. mushrooms, chopped
  • 1 cup (8 oz.) sour cream
  • Hot cooked wide egg noodles
  • Chopped parsley, for garnish (optional)

 

 

 

Directions:

  1. Cook beef, onion and garlic over medium heat until meat is no longer pink; drain.
  2. Stir in soup.
  3. Simmer uncovered for about 10 minutes.
  4. Stir in sour cream and cook until mixture is hot. DO NOT BOIL!
  5. Serve over cooked noodles.
  6. Garnish with parsley, if desired.

Quick Tip: I had no idea you could make a soup substitute until a few months ago when I couldn’t find a can of Cream of Chicken soup I thought I had in my pantry.. In fact I am SURE it was there! I googled is and was able to save the day..and dinner by whipping it up from scratch. Well, this is kind of the same thing.

*** To make condensed soup substitute:

  • Melt 2 tbsp. butter in a saucepan.
  • Stir in 3 tbsp. flour and stir until smooth and bubbly.
  • While continuously stirring, add 1/2 cup chicken broth and 1/2 cup milk.
  • Bring to a low boil, continuing to stir until it thickens.
  • Salt and pepper to taste.

Use in place of canned cream of “whatever kind” of soup. You can also add herbs, celery or mushrooms.

    My mom used to make a similar dish but served over mashed potatoes. She called it hamburger gravy….yummm
