I mean really, how can you go wrong with real butter. The coconut and cream cheese filling are a perfect blend of flavors. When baked together you have something out of the ordinary. The texture is so creamy and the coconut makes this memorable. You have something amazing. Something you want to share with others. This recipe can easily be made in a spring form pan and cut into small wedges.

Coconut Cheesecake Bars

Ingredients

CRUST:

  • 1/4 cup unsalted butter melted, cooled completely
  • 1/4 cup granulated sugar
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

FILLING:

  • 1 8 oz . package cream cheese softened
  • 1/2 cup granulated sugar
  • 2 Tablespoons all-purpose flour
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1 cup and 1/2 sweetened shredded coconut

Instructions

    1. Line 8″ square baking pan with parchment paper or aluminum foil. Set aside.
    2. Preheat oven to 375 degrees F.
    3. In a mixing bowl, mix together melted butter and sugar. Add flour, baking soda, baking powder and salt and mix well. The dough should be thick.
    4. Press the crust dough onto the bottom of prepared pan. Set aside.
    5. In a mixing bowl, whisk together cream cheese and sugar.
    6.  Add flour, egg and vanilla. Mix well.
    7. Stir in coconut.
    8. Pour cheesecake mixture over the crust. Spread evenly.
    9. Bake cheesecake bars for 33 to 36 minutes or until the center doesn’t jiggle anymore and the top is golden.
    10. Cool completely before slicing.
