This is The Pie My Grandma Used To Bake

One of my favorite memories growing up was staying with my grandparents on a lake for a few weeks. It was so peaceful and my sister and I would swim and sun ourselves every afternoon. Many times, we would go with them when they visited their friends. I played guitar so I was always told to play at least two or three songs while coffee and pie was being served. It was such a lovely time, even as a teenager, to see how people enjoyed each other’s company. I think that is what pie does. It is the kind of desert you want to savor. The simple flavors are basically the last thing you eat for the day and as a result are often the most memorable. Make it from scratch and see for yourself.

Blue Ribbon Apple Pie

Ingredients

  • 1 pastry for a 9-inch double crust pie
  • 1/2 cup unsalted butter
  • 3 tablespoons all-purpose flour
  • 1/4 cup water
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 8 Granny Smith apples – peeled, cored and sliced
  • Optional- whipped cream or vanilla ice-cream

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Melt the butter in a saucepan.
  3. Stir in flour to form a paste.
  4. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
  5. Place the bottom crust in your pan.
  6. Fill with apples, mounded slightly.
  7. Cover with a lattice work crust.
  8. Gently pour the sugar and butter liquid over the crust.
  9. Pour slowly so that it does not run off.
  10. Bake 15 minutes in the preheated oven.
  11. Reduce the temperature to 350 degrees F.
  12. Continue baking for 35 to 45 minutes, until apples are soft.
  13. Serve warm with whipped cream or ice-cream

Quick Tip: I have a silicone ring that goes around the edge of the pie crust. I Love it. The edges are always perfect and you can bake them right on the pie. I loved it so much I bought one for my mom!
