No Bake Pie That you will go NUTS over!

When our kids were younger I taught them how to make Dump Cakes. Everytime my parents came over to visit or we had other guests the kids would make the dessert. I think it was also an opportunity to teach them about the art of hospitality.

Having things on hand to put something homemade together is part of being prepared tor expected or unexpected guests.

EASY NO BAKE COCONUT CREAM PIE 
INGREDIENTS:

  • 1 recipe Golden Oreo Crust (Graham Cracker or Shortbread may be substituted, homemade or store bought)
  • 2 boxes (3.4 ounces each) Instant Coconut Pudding Mix
  • 3 1/2 cups milk
  • 2 cups shredded sweetened coconut
  • 1-2 cups Fresh Whipped Cream or Cool Whip, for topping
  • 1 cup toasted coconut, for topping

DIRECTIONS:

  1. Chill your pie crust recipe while making the filling, if you made it from scratch. No baking necessary! (If you’re making a Golden Oreo crust, no need to remove the filling either.)
  2. Add pudding mix to a large bowl.
  3. Add milk and whisk until smooth. The mixture will be slightly lumpy from the coconut in the pudding mix.
  4. Let sit for 5 minutes until soft set.
  5. Stir in coconut.
  6. Pour into pie crust.
  7. Cover and chill for at least 3-4 hours.
  8. Top with whipped cream and toasted coconut before serving.
  9. Store covered in refrigerator for up to 3 days.

Quick Tip: If you cannot find instant coconut pudding you can use vanilla or white chocolate with a tsp of coconut extract.
