Jell-O is a Midwest Pantry Staple

One of the things I noticed was how much Jell-O was consumed while we lived in Fergus Falls, MN. At a potluck it was not uncommon to see the full rainbow of flavors on the salad table. Jell-0 is NOT a salad, unless you live in the Midwest!

ORANGE FLUFFY JELL-O SALAD

Ingredients:

  • 1 small package orange Jello (3 oz)
  • 1 (16-oz.) carton cottage cheese
  • 1 (8-oz.) container Cool Whip
  • 1 can (11 or 16 oz) mandarin oranges, cut in half and drained
  • 20 oz. can crushed pineapple, drained

Directions:

  1. Mix dry Jello with cottage cheese until dissolved.
  2. Add oranges and fold in Cool Whip.
  3. Can decorate top with remaining mandarins.
  4. Cover and keep cold. Firms up if chilled before serving.

For more than 8 people, I like to double this recipe. It stores well and gets eaten up fast! Especially by the kiddies!
