You Don’t Even Need an Oven To Make This Showstopper Dessert

Just looking at this recipe reminded me of the mint flavors that I love. Thin Mint Girl Scout Cookies, Chocolate Mint Ice Cream, Bavarian Mint Hot Cocoa. The flavor is so distinct and refreshing in a soothing way.

And the graham cracker crust is the perfect thing to make these bars stand out on a table full of other dessert options.

No Bake Mint Chocolate Bars

INGREDIENTS:

  • 1/2 cup butter
  • 1/3 cup cocoa
  • 1/4 cup sugar
  • 1 egg
  • 2 cups graham cracker crumbs
  • 3/4 cup shredded coconut

FILLING

  • 1/4 cup butter
  • 2 cups powdered icing sugar
  • 2-3 tablespoons milk
  • 1 teaspoon mint extract
  • green food coloring

GANACHE

  • 2/3 cup chocolate chips or chopped chocolate
  • 2 tablespoons butter

DIRECTIONS:

BASE

  1. Line an 8×8″ pan with tin foil.
  2. In a large microwave-safe bowl, combine butter, sugar and cocoa and microwave on high for 45 seconds.
  3. Stir, and microwave on high another 20-30 seconds if necessary so that all is melted and combined.
  4. Let cool 5 minutes and quickly whisk in egg (mixture will thicken as the egg is incoprorated).
  5. Stir in graham crumbs and coconut until combined.
  6. Press into prepared pan.

FILLING:

  1. With an electric mixer, beat butter until smooth.
  2. Add powdered sugar and 2 tablespoons milk and beat until smooth, adding a little more milk or sugar to reach desired consistency.
  3. Add mint extract and green food coloring (as desired).
  4. Spread over base in pan.

GANACHE:

  1. In a medium microwave safe bowl, combine chocolate and butter and melt in 20 second intervals on high, stirring each time, until smooth.
  2. Pour over filling in pan.
  3. Refrigerate until completely set, at least 2-3 hours, before slicing and serving.
  4. Store in the refrigerator or freeze for up to a few months.

Quick Tip: If you want to make this a little more fancy, go ahead and make in a spring form pan. Cut small pieces and serve with a school of vanilla ice cream on top.
