When we went to my son and daughter-in-law’s home for dinner, one of the first things that caught my eye was the simple yet elegant strawberry tea-cake under the clear glass cake dome. Seriously, it looked like it could have been in a food magazine.
The fresh strawberries and almonds added the perfect touch to this melt in your mouth dessert. It didn’t need any topping or glaze because it was packed with flavor. It had just a delicate dusting of powdered sugar.
We had such a fun time visiting with our kids and finding our about their new jobs. Before we knew it, it was time to say our good-byes. We gave hugs all around but thankfully I remembered to ask Aarika for the dessert recipe.
I thought she had been baking all afternoon to create such a beautiful dessert. I was wrong. This recipe requires only one bowl and a spring form pan to create this showstopper dessert.
Next time we need to take a dessert somewhere, I am taking this gem of a tea cake.
