Hot And Zesty, Just Like You Love It!

I love the spicy flavors of Mexican food. And I love pasta! This is a perfect twist of two amazing dishes into one, and thank goodness they are easy to make!

I remember the first time I made jumbo stuffed shells. Talk about an epic failure! I think I must had read the recipe all wrong because I had to actually scoop out the filling and try to start again. I had not read that the shells needed to be cooked in advance! So I had tyo go back to the drawing board. Let’s just say by the time I filled the shells, scraped out the shells, and refilled the shells again the whole kitchen counter was a mess. The worst part was that was my very first meal I cooked for John after we got married. I guess I could only improve from there!  Now that we have been married over 32 years I am sure there have been a few meals that really were not the best, but that is just the way life goes sometimes. We can’t always be on our game, some days are just harder than others. I am not just talking pasta here friends, I am talking about the day in and day out of just living.

Fact: Just in time for football season this Crock Pot Recipe really makes this a TOUCHDOWN!

School is about to start, but football practice has been running for most of the summer. With our youngest getting ready for his senior year of hitting the turf as a starter, I am getting my head in the FOOD game. As in what food do I wan to make ahead and take with us!

Not that greasy fries and nachos are a bad thing..if eaten in moderation, but do I really wan to spend my time standing in a long line when I could be watching the game? My kid is playing out there for heaven sake and this is his last season.

Plus, I have always packed our dinner to eat at the game. It is as traditional as singing the national Anthem before the kick-off.

This is a crock pot recipe that I can toss together in the morning and put into a thermos before we head out.

Plus, for a hungry athlete. This hearty soup really hits the spot.

Another thing I love about this cozy lentil taco soup is that it’s freezer friendly. Make a big batch, then freeze half for lunches later this Winter. Meal prep like a boss!

This casserole has everything in it!

Enchilada sauce, chilies, corn, black beans, ground beef..and TATER TOTS?

Full confession, when I saw this recipe I thought maybe I had looked at it wrong, but there it was, tater tots on basically everything I would wrap into a tortilla and smother with cheese. But then I realized it made so much sense because it saved so much time!

I was used to serving tater tots to our kids when they were young with a small dab of catsup to dip them in, but this recipe uses the finger food as an ingredient. Brilliant.

Basically, a tater tot is just a hash brown. The small little potato creations make for a perfect serving because of the line up neatly on top of the casserole.

When we lived in Minnesota, Tater Tots were part of several “hotdishes” that graces the long church potluck tables that also brimmed with an assortment of Jell-O salads. But the contents of the main dish usually involved string beans, sausage, and cream of mushroom soup.

This recipe is a spicy dish that can have extra heat added or be toned down a bit for those with a delicate palate.

And chances are you might even have most of the ingredients in your pantry!

Because you are skipping the tortillas, this is also a great gluten free option. Your company will love that you thought of everything. But knowing how quick and easy this is to put together can be our little secret!

Don’t you LOVE being able to have something you can pack up and not need a fork?

Okay, I am sure that some people will want to use a fork. They are most likely the ones who use a fork to eat pizza. Really? I mean that just seems WRONG!

This taco braid is almost like a large hot pocket of chicken, spicy, yumminess. If you are having a large crowd over, why not make two braids!  If you are lucky you can take the left overs for lunch the next day.

Now that school is about to start I am already thinking about my Game Day line-ups for dinner time. Eating at high school events can really be expensive so I have always packed dinners to eat in the stands.

And when you have a kid who just played their heart out, they can’t wait to get home to eat, so I always pack one for our athlete as well.

Making chicken ahead so this goes together as fast as you can yell, Off Sides, is a huge benefit, so if you see chicken on sale, go ahead and get a few extra pounds to cook up and shred. when it is time to put one of these together you will be glad you did!  Cook once, eat twice!
