So much flavor it will drive you NUTS! As in Coconuts:~D

Lemon curd is one of my absolute favorite flavors ever. The sweet and tart flavor of the cheery citrus just makes me happy thinking about it. I have made gallons of the yummy stuff over the years and usually put it on pavlova, toast, or croissants. When I saw that this cake used it as an ingredient, I was hooked.
This cake is definitely something that might take longer than a boxed cake or something that has only a few ingredients. Some things are just worth it and I think the pay off for taking the time to bake something fabulous will be worth every bite.

Another great aspect of this cake is that you can pull out your very best cake platter, you know the one, it was handed down from your grandmother, or you received it for your wedding. If you don’t have something fabulous to display this work of art, pull a DIY and make one..or go to Target and buy one.

Yeah, I think I might go for that option after all a gal can only do so much!

Quick Tip: Make sure to allow eggs to sit at room temperature before separating and whipping up. Also, make sure the beaters and bowl are completely free of any oil. Just saying that those few things will really help to ensure you get nice stiff peaks.

Chicken dinner sounds so ..blah blah, but if you add all the right ingredients, your family is going to be amazed at what you serve up!

What are the right ingredients? Well, let’s start with garlic, bell peppers and PINEAPPLE!

I know there are a lot of chicken breast fans but I happen to be partial to boneless skinless thighs. They don’t dry out and are super flavorful.

Having a recipe that can easily be re-heated is awesome as well. Face it, not all meals taste as good the following day, but a recipe like this really allows the flavors to mix together. Hello left-overs!

I love being able to put rice in the rice cooker and know that by the time it is ready, dinner will be ready to serve.

This is what Rachael of Eazy Peazy Mealz has to say about one of her favorites mash-up recipes.

One of my favorite things to get at a local restaurant is their firecracker chicken, seconded by sweet and sour. I started thinking about it, and thought how yummy it would be to make a cross over of sweet and sour and firecracker, and so I came up with Pineapple Firecracker Chicken. It has that heat you expect from firecracker chicken, with the sweetness of sweet and sour.

Quick Tip: If you don’t have frozen pineapple chinks you can use canned pineapple in its own juice or even fresh pineapple!

Another time saving idea is to have the chicken already prepped ahead of time. If you are making something like chicken enchiladas, go ahead and buy more meat, cut it up and put 2 pounds in the freezer. Make sure to mark the bag what you are planning to use it for.

This is a basic crock-pot 101 that nails it on flavor and versatility.

I really stink at using the crockpot, or slow cooker, as some of my sisters in the South call the handy-throw-everything-in-and-forget-about-it kitchen appliance.
I am not sure if I had a bad crock-pot experience as a child or what. Nothing that a few batches of cookies therapy won’t cure, but still. I really think it is because the only thing I knew how to make was the pot roast with onion soup mix, potatoes, and carrots. Not bad, but not something you want to eat very often. The potatoes and carrots were yummy, don’t get me wrong, but they were coated with a layer of grease from the meat. I felt like I should serve it with a kale smoothie as a clean-out for my system.

My crock-pot is in the top shelf all the way in the back, right next to the fondue pot. I need a chair to reach it and when I do, I usually have to wash the dust off before I can use it. I have considered several times giving it away but am always hopeful that “One Day I will get the hang of this and when I do it will make my life so much easier!”
Well, I think that day may have arrived!
I just purchased a huge tenderloin cylinder from Costco. The price was 1.99 a pound and it had a $2.50 discount per package at the register. Too good of a deal to pass up.

So, with renewed optimism,  I looked up recipes as soon as I got home. This one looked amazing.

The edible pineapple flowers are a real showstopper!

I am such a push-over for recipes. When my daughter-in-law, Roxanne, was visiting from Colorado, she introduced me to a show she and her mom had been watching called “The Great British Baking Show”.

It worked out that I went to her parents home where she was staying on their visit. My son is building their home and had to work, and Roxanne’s carpenter dad was in Colorado helping with the construction project.

It was just Roxanne, our grandbaby, Roxanne’s mom and I.  I packed an overnight bag and had a sleep-over, which gave me extra time with the baby.

After we ate dinner, I read a bedtime story to the busy little boy, put on his pajamas and tucked him in for the night.  He is so adorable and at just nine months is changing so fast.

Then, it was just us girls. We changed into our pajamas, cozied up on the couch, and watched a few episodes of what is now my new favorite baking show. Ever.

One of the things that one of the amazing star bakers did was to create pineapple flowers for her cake.

I thought it looked adorable and so looked up how to do it and found this amazing recipe for hummingbird cake topped with a few of these showstopping fruit flowers.

This is what Martha Stewart says about this crowd pleasing cake.

Rumor has it, this crowd-pleasing cake got its name because every bite makes you hum with delight.
