The greatest part of these enchiladas is that the left overs are the BOMB!!

My mom makes the best beef enchiladas. I would often ask her to make them for my birthday dinner. I learned how to make enchiladas and guess what. my kids often ask me to make them for their birthday dinners.

Every once in a while I make them just because everyone loves them so much. Hopefully, your family will love these as much as we do.

Usually, I make my enchiladas with canned sauce. But this recipe comes with a recipe for homemade enchilada sauce.

Perfect!  Once you make this dish you will never have to wonder what to fix for Mexican Food night again!

Mexican food… ahhhhh Mexican food. I just simply do NOT get tired of eating it! Tacos, nachos, burritos, chimichangas, fajitas, and enchiladas. There are so many recipes for enchiladas, but this one is my absolute favorite one. Beef enchiladas with something extra… a homemade enchilada sauce!

I was just talking with someone about what we loved about living in the Midwest.

First of all, being from California, I thought that fireflys were just about the most magical thing I had ever seen. When you saw them in a grassy field on a warm muggy night, it was like watching a party of Pixies bounce along in the sky. Lighting up, then disappearing, like leaving little dash marks.

The other thing we loved about the Midwest was the slower pace of life. Everything was measured in miles, not minutes.It wasn’t 45 minutes to work, it was 20 miles.

I loved the people. We had some of our closest friendships with the people we met while living there. Friendships that, almost 18 years later, are still dear to our hearts.

This is the kind of salad that is easy to have the ingredients on hand so that you can toss something together for impromptu gatherings.

And if you are lucky, you might even spy a few fireflies in the expansive night sky.

This is what Sally McKenney says of her salad recipe.

This kicked up pasta salad with a zesty Greek yogurt dressing is full of the fixings from taco seasoning to cilantro, cheddar cheese, avocado, black beans, and corn. So easy to mix up ahead of time, too!

It’s Not Just A Salad. It is a Way Of Life!

If you have ever been to a women’s salad luncheon you understand the urgent need to freshen up the menu pool.

I get it. I really do. There is a comfort in knowing that the salad you always make doesn’t even require you to break open a cookbook or reference one of the magazines that you have stacked up next to your bed.

When we lived in Minnesota, one of the things considered a salad was Jell-O with fruit cocktail and a dollop of Cool Whip. Maybe it was just me, but seeing a rainbow of assorted Jell-O salads was a bit alarming.

I mean if it was the dessert bar, I guess I would understand, but there are some serious things to take into consideration when it comes to building a perfect salad. This salad has so many awesome ingredients that all you need to do is add a piece of chicken and you are ready to go!

This is what Karina of Cafe Delights says about this fresh side.

Avocado Greek Salad is a twist on the traditional Greek Salad! Normally, an authentic Greek salad does not contain avocado or lettuce but consists of green peppers (or capsicum), tomatoes, cucumbers, feta, olives, and onion. In this house, however, we always add avocado. Avocado – on – everything – addiction. And why not?! It’s such a great addition, you’ll be doing it too!

Quick Tip: If you buy an avocado that isn’t ripe you can help Mother Nature a bit by doing the following.  Completely wrap avocado with tinfoil, then place it in a baking dish, and transferring it to a 200°F oven for 10 minutes, or until it softens. Avocados release ethylene gas, which ultimately promotes ripening. Who Knew?
