The Taste Of a Classic, Only In A Soup

I love making and eating soups. I think that on a brisk day nothing beats a big bowl with some fresh breadstick to just warm you up from the inside out. We lived in MN for nine years and believe me, there were lots and lots of soup days.

When we moved back to Northern California we lived in the Sierra Mountains. It was a wonderful feeling to have a big pot of soup or stew on the stove when snowflakes started to fall.  The perfect meal after a day of sledding or shoveling the walkway!

Then we made the move to San Diego area. I have to admit I miss the seasons. Not only is it hard to think of fall or winter when you are still wearing flip flops and short sleeves, we don’t eat soup very often. At least not as often as I would like, but thankfully I hear temperatures are going to be dropping soon. We might even have a few mornings where you will be able to see your breath when you walk outside. If there is a dusting of frost, well down in SoCal they refer to that as a weather event.

Quick Tip: You can substitute chicken sausage for ground beef if you prefer. I LOVE a chicken sausage I just tried with basil. Yummo. It would be great in this and good for those watching their calories as well.

Hot And Zesty, Just Like You Love It!

I love the spicy flavors of Mexican food. And I love pasta! This is a perfect twist of two amazing dishes into one, and thank goodness they are easy to make!

I remember the first time I made jumbo stuffed shells. Talk about an epic failure! I think I must had read the recipe all wrong because I had to actually scoop out the filling and try to start again. I had not read that the shells needed to be cooked in advance! So I had tyo go back to the drawing board. Let’s just say by the time I filled the shells, scraped out the shells, and refilled the shells again the whole kitchen counter was a mess. The worst part was that was my very first meal I cooked for John after we got married. I guess I could only improve from there!  Now that we have been married over 32 years I am sure there have been a few meals that really were not the best, but that is just the way life goes sometimes. We can’t always be on our game, some days are just harder than others. I am not just talking pasta here friends, I am talking about the day in and day out of just living.

Do Not Try To Make These Without Learning The Secret Ingredient In This Recipe.

I don’t know about you but if I could pick a food that I have learned to love as an adult I would have to say it would be sweet potatoes.  There is a little bit of a difference between sweet potatoes and tams. I actually thought they were the same thing but they are different plants. I think the sweet potato is a little sweeter and it also has more of a consistency of Yukon gold as far as fibrous texture goes.

As far back as I can remember my mom used to make a sweet potato dish by starting with canned yams. You know the ones. They show up on the end caps at grocery stores around Thanksgiving. Usually there is also tall stack of mini marshmallows right next to them along with brown sugar. Yep, that is the casserole I am talking about and while Thanksgiving might not feel complete without it, kind of like the multi layer Jello Salad recipe that has been around for ages, sometimes a little change is a good thing.

Using fresh ingredients is such a game changer. When I first made recipes that called for sweet potatoes and began cooking with them I had no idea how delicious they really were. When I found out they were good for you, well let’s just say a happy dance might have happened right in my kitchen!

“Also, I always make these with breadcrumbs. The times I’ve tried these with flour, they come out gooey in the centre. Very, very soft and almost like a cake batter.”

Somethings are just worth the effort! Wait until you stick your fork in this!

There are a few foods that my family could eat every single week. Lasagna and pizza are on the op of the favorite foods list. So seeing those two words together in the same recipe is perfect!

I have been a little hesitant to try this recipe because it looked like more work than I wanted to tackle. But really, it isn’t something too gigantic and if you make this on a Sunday afternoon, you can bake it as soon as you get home from work on Monday.

Since this makes a huge pan, I suggest being prepared for two meals and maybe some lunch leftovers. Gotta
love that!
When you are having a large crowd over it is nice to be able to figure out how many serving you are going to need and this recipe really sets the serving and portion size up with each roll. plus you can have everything ready to just pop those babies in the oven.

Just ask someone to bring the salad, bread, and a side or dessert.

I know not everyone is a pork eater so don’t toss this recipe out because of the pepperoni! After all you can do a meatless option or a chicken meat option.

Either way, the fresh ingredients in this homemade sauce will be a show stopper that will definitely turn heads.

These pizza lasagna rolls are a fun meal that the whole family will love — what’s not to love about pizza and lasagna? With a little planning ahead, they are a great weeknight meal.
