Can you really think about eating a nice juicy burger without fries on the side?  Not me!

One of our favorite places to grab a quick bite is In and Out Burger. Our son works there now so we have plenty of reasons to swing in. Ordering a number 3, grilled onions with peppers, protein style hits the spot every single time. I love that everything is fresh and hot. Just like when I make food at home.

Even if I don’t order fries when we stop at our favorite fast food burger place  I still find myself sneaking a few off my husband’s tray. Usually he just goes ahead and order extra fries because he knows that I can not eat just one ..or two..of three.

I have made baked fries a few times and it never seemed as good as I hoped, but this recipe is totally different. This recipe addresses why baked fries tend to get a bit soggy. And really, who wants a soggy fry?

A yummy cross between two of our family favorites! This recipe has all the flavor, without all the calories.

I am always trying new muffin recipes that are hearty, healthy, and will help fuel up our family. With this cross recipe, I think I found a winner! Plus, it is a lower calorie version of many of the muffin recipes I have tried.

Being able to replace half the oil with unsweetened applesauce really helps to keep the muffins from being heavy and dense. Because these muffins are full of carrots, apples, and raisins, they are perfect for a quick snack.

My husband, John, works in the construction industry. He often eats breakfast and starts his day long before the sun comes up. Needing a healthy mid-morning snack is something I try to pack in his lunch. Having muffins that pack well are a big hit.

Adding raisins or dried cranberries to a batter is not anything new, but this is the first time I have ever soaked the dried fruit before adding it. I loved how it turned out.

Quick Tip: If you have bananas that are starting to get freckled and are beyond eating. Try mashing up and replacing the applesauce. I am a huge fan of not letting food go to waste and having a plan for when your fruit starts to look like it might be beyond it’s shelf life helps you be “pantry frugal”!

Don’t Let This Simple Muffin Fool You.

Perfect for those soccer mornings where just getting out of the house with everyone’s gear in hand is worthy of a trophy..or at least a sticker!

Recently I combined two of my favorite muffin recipes and doubled it. I ended up with a huge mountain of muffins, and my family couldn’t be happier. As a mom of 6 very busy and hungry kids, I know what I am talking about when it comes to feeding your family hearty and healthy food.

I put a dozen in each gallon sized zip-lock bags and put most of them in the freezer so I could just take a few out at a time. Because I substituted most of the oil for applesauce, these muffins are moist without being heavy.

 “As much as I love the convenience of buying cardboard trays of muffins from the large discount warehouses. I know it is so much cheaper, and healthier when I make them from scratch.”

Helpful Hint: If you don’t have buttermilk on hand you can make your own! Who knew?  Pour 1 cup of milk into a bowl. Stir in 1 tablespoon of lemon juice or white vinegar. Let stand 5 to 10 minutes. There you go!
