Hot And Zesty, Just Like You Love It!

I love the spicy flavors of Mexican food. And I love pasta! This is a perfect twist of two amazing dishes into one, and thank goodness they are easy to make!

I remember the first time I made jumbo stuffed shells. Talk about an epic failure! I think I must had read the recipe all wrong because I had to actually scoop out the filling and try to start again. I had not read that the shells needed to be cooked in advance! So I had tyo go back to the drawing board. Let’s just say by the time I filled the shells, scraped out the shells, and refilled the shells again the whole kitchen counter was a mess. The worst part was that was my very first meal I cooked for John after we got married. I guess I could only improve from there!  Now that we have been married over 32 years I am sure there have been a few meals that really were not the best, but that is just the way life goes sometimes. We can’t always be on our game, some days are just harder than others. I am not just talking pasta here friends, I am talking about the day in and day out of just living.

Have you ever made tamales from scratch? This is SO Much easier!

A few years ago my daughter and I decided to learn how to make tamales. When I saw that a local eaterie was having a class I decided to sign up us. In fact, I decided to sign up my mom as well. I made us all matching aprons and we took the class together. It was a total blast and the best part was that we were able to take the tamales we made

I made us all matching aprons and we took the class together. It was a total blast and the best part was that we were able to take the tamales we made home. We made chicken and beef and even though it has been several years ago I still remember the amazing taste.

The other thing I learned after taking the class is that tamale making is hard work! It is very time consuming and I can see why groups of people make them together and create huge bunches.
Even though this isn’t quite the same thing, I love that the flavors remind me of what we created during class. I also love that this can be made in one pan. Actually a skillet, which has perfect for going from the oven straight to the table.

And you know what that means? The less pans there are the less mess it makes. Serious;y this is going to be one of our new go to meals. It might have to cook for 50 minutes but only takes 10 mi minutes to prepare.

Tired of cooking? This creative twist on Enchiladas might be you new best friend!

Our kids love it when I make enchiladas. I have to admit, they are pretty darned awesome. Probably because I learned how to make them from watching my mom make them the whole time I grew up.

she would heat up the sauce in a skillet and carefully dip the flour tortilla in the sauce, then set it in the pan, put a scoop of cooked ground beef and onion down the middle and add some cheese before rolling up. Soon the whole pan was filled, topped with more sauce, olives and another layer of cheese.

It was so yummy, but also a lot of work.

 

Which is why we usually had them for special events like birthdays. My kids still ask me to make enchiladas for their birthdays!  What can I say, I guess it is a family tradition.

When I found this recipe that incorporated all the flavors of our family favorite into an easy to make casserole I knew I had a winner on my hands.
