These Pumpkin Cinnamon Rolls Put Mom’s Diner on the Map

Just the color of these fall cinnamon rolls makes me happy! Everywhere you turn there are pumpkin inspired foods, snacks, and recipe. There is no way I could ever make all the things I want to make, but I will try! I thought at one point during my fall baking I would begin to get tired of pumpkin but I have found the opposite to be true. The more new recipes I try, the more I am in love with the amazing and multifunctional gourd!

I used to think that pumpkins were just for carving or decorating, but now when I go shopping all I can imagine is how many cups of fresh puree can I make. It reminds me of the cartoon when one of the hungry characters sees his friend and all of a sudden they look like a piece of food.
Yeah..that is me looking at a pumpkin. I see the round orange vegetable but what I really am imagining is pumpkin scones, pancakes, or cinnamon rolls.

Bring On The Chili Weather!  Pun Intended

What is a busy mom to do when dinner time rolls around and EVERYONE is hungry? Well, try this dish and watch your family eat it up. I love a hearty meal that you can create in a hurry and with simple, yet hardy ingredients. Really, it comes down to just taking a few moments to sauté the onions and fresh garlic before adding in the carrots, browning the beef and adding the pinto beans. Really, this is the perfect comfort dish that reminds me of my husband’s favorite food. Chili beans and cornbread. Seriously, he could eat it every week if I made it for him. The fact that this cornbread is baked right on top means no more dry cornbread for my family!  I love the fact that this is cooked in one dish, which means the clean-up is fairly minimal.  So, whether you are looking to take something to a cabin or just want a hearty Game Day Dinner, this Cornbread Chili Pie is a perfect dish.

And for more of a Southwest flavor go ahead and add in some diced fire roasted hatch chilis and a can of corn.  That really helps to stretch this dish out and if you are lucky, you might even have some for left overs.

What Happens When A Starbuck Pumpkin Spice Latte Collides With Bread Pudding?

I hadn’t really planned to make a pumpkin bread pudding, but sometimes when you are trying something new and using the ingredients on hand you just stumble across something absolutely mind boggling. That is what happened with this recipe. I had just made some pumpkin muffins the week before and had a half of a large can of pumpkin puree left in the fridge. I also had a loaf of bread that was starting to get a little stale so instead of just chucking it, I made some bread pudding. Pumpkin bread pudding!

It was such a huge hit my family asked me to make it again. This time we had company over and they wanted to know if I would be willing to share the recipe. Yikes! I didn’t even know exactly what the recipe was so I made it again and this time wrote everything down.

Basically, if you have what you need for a pumpkin pie plus some bread you have what you need for this comfort food. And trust me, I have even used day old French baguettes and they worked just fine. Which I think is one of the beautiful aspects about bread pudding. It is simple and resourceful.

Quick Tip: I love making individual desserts when company comes over. You can divide this into small ramekins or even small wide mouthed canning jars.  For smaller jars you might want to put filled jars or ramekins on a tray and add in ½ inch water to keep from drying out.

Surprise Your Co-Workers With These Fun Brownies

My parents used to love to host Halloween parties when we were kids. My mom used to make a big stock pot of homemade root beer and you know what they used to carbonate the drink. Dry Ice! How perfect is that? And the other thing I loved growing up were all the fun outfits my mom would make. One year I was the good fairy from Pinocchio. One year I was a bumble bee and one year I dressed up as a Jack in the Box.

I loved it when we had kids and I could dress them up in fun outfits as well. They were so hilarious. For a few years I told our kids that Halloween was all about dressing up so they could hand out candy to people who can to the door dressed up. After a few years, they caught on that they should be the ones going door to door. Then they figured out if they sung “Trick or Treat” in three part harmony they would get twice as much candy. Brilliant! If only they applied that level of genius to cleaning their rooms!

Even though we have moved beyond dressing up, I still love making fun treats for my family. Thankfully three part harmony is totally optional.

Tricia Yearwood Shares Some Of Her Southern Style Recipes On The Internet

I grew up making cobblers just like my grandmother used to make. She started with a dough that is half biscuit and half pastry, rolled out and then use to line the baking dish. Then she spooned fruit in and piece some of the dough on top. Of course it couldn’t go into the oven until pats of butter and a sprinkling of sugar was added.

Tricia’s  recipe really caught me off guard. I had to read it twice to make sure I wasn’t doing something wrong but I saw such great reviews and, let’s just be honest, Tricia Yearwood is so adorable I just couldn’t resist making one of her recipes.

The reason this crust is so flavorful is that it has peach flavor all the way through. Literally! The batter starts on the bottom and rises to the top as it is baked so you have the taste of fruit in every single bite.

The other thing that surprised me was that Tricia didn’t use fresh fruit for this cobbler! I LOVE fresh fruit cobblers but fruit isn’t always in season and sometimes you have to just use what you have on hand.

Quick Tip: If you want to use fresh peaches or nectarines go ahead and slice up enough for 4 cups. Make a simple syrup out of ½ cup sugar and 1 cup of water. Let boil then add sliced fruit.

I Couldn’t Believe My Eyes When I saw My Grandmother Pull This From The Oven

I just can’t get enough of baked apples! Anything with baked apples, oats, and cinnamon just reminds me of fall. It is my favorite kind of comfort food and I never get tired of it.. EVER! I know this recipe is supposed to be for a dessert, but with all the apples, eggs, and oats it should count for a breakfast food! Because seriously when I smelled this baking in the oven the last thing I wanted to do was wait until after dinner. I was ready to just grab a fork and cut myself a big piece.

My Great Grandma Upton would have loved this recipe. She cooked a lot of her meals in a cast iron skillet that looked like it could have weighed as much as she did. It had been seasoned from years of use and she was careful to make sure to clean it up and dry it before putting it back in her oven where she kept it.

I love this recipe because it really isn’t a pie or a cake, but can be sliced up in wedges and served with a dollop of Cool-whip, whipping cream, or even a scoop of vanilla ice-cream. Go ahead and serve this right from the skillet onto the plates. That is exactly what my Great Grandmother would have done as well.

Quick Tip: Make sure you get good baking apple for this dessert. I love Pink Lady and Honey Crisp, but your just can’t go wrong with Granny Smith. And I don’t peel my apples when I bake them. I use the apples skins and all!

Make This Dinner Just Like An Italian Chef. Bon Apetite!

When I saw that Ree Drummond posted this recipe I had to check it out. I love all her recipes. I think I started following her when she was just getting started and there was just something personal about her life with Marlboro Man and her kids. It made me want to move out to a ranch! Ree started out talking about taking caer of her family and that is exactly what I was doing as well. Her simple yet delicious recipes really helped me add some fabulous meals to our monthly menu.

I love that this recipe calls for tiny little meatballs, so there are plenty throughout this zesty dish. However if you find that is a bit more time consuming than you had anticipated, go ahead and make them a bit bigger, but I will warn you right now, you might as well make a double batch because the meatballs they are going to be such a hit that your family will be diving into the middle of the pasta to find the last one.

This is what Ree has to say about her recipe.

“It’s got miniature meatballs, carbalicious pasta, and big chunks of mozzarella all throughout, and after you bake it in the oven the heavens open up. It’s delicious!”

Grab Four Favorite Sweater And Cozy Up TO This Cupcake

I grew up not far from a place called Apple Hill. I love anything made with apples and that includes apple butter. My oldest son is a huge lover of the brown spicy apple goodness. I think it was from remembering how the house smelled when I would have a huge crock-pot of peeled, sliced, and cooking apples mixed with cinnamon and nutmeg. I used to cook it for about three days. The house smelled so amazing! The taste was even more incredible.

Nathan asked if he brought me the apples me would I make apple butter. I totally agreed. At the time Nathan was working for a man with a few trees. . He told Nathan he could have as many apples as he wanted if he picked them.  Later that day I came into the house to find 4 laundry baskets of apples. Let’s just say we ate a lot of apple butter that year: ~D

Starbucks Inspired Recipe Just Stole The Show

A hard day?  Tired and frustrated? Maybe you are in the middle of a project that has just taken a turn for the worse. Well you are in luck my friend. Because if this recipe doesn’t cheer you up, you might need to check for a pulse. The smell of Banana Bread baking in the oven seems to help troubles just a little more manageable. One small bite at a time.

Put it this way, do you think Starbucks would waste space in their bakery cupboard for something that wasn’t a huge hit with their customers? The answer is NO. Some of their baked goods are standard such as blueberry scones, filled croissants and banana bread. You know what I think appeals to people? It is naturally sweetened by fruit and everyone knows someone who baked this. Whether it is a mom. A grandma, or a favorite next door neighbor, the aroma of freshly baked banana bread just says, come in, share your soul, and stay for a slice.

Because Starbucks knows that this goes with a great cup of coffee, this copy-cat recipe is extra moist, but don’t take my word for it. Bake a loaf and see for yourself. Or better yet, bake two loaves and share with someone who could use a bit of a lift.

I used to think that anything Red Velvet was a bunch of hype.

I mean how much flavor does red food coloring add? The answer? ZERO!

But the real secret it that it isn’t the red color that makes these stand out, it it the subtle flavor of cocoa against a buttery backdrop. Seriously I think my timer just went off..or it very well could be an angel getting it’s wings.

I found I don’t enjoy consuming so much red color just because it is..well you know. RED.

This recipe calls for enough color to make these brownies jump off the page with color. Woot Woot! But if being a bit more subdued is in order, feel free to cut the red coloring in half and call the cake something else.

Pink Champagne cake! Of course there isn’t any champagne in the cake, but then again there wasn’t any edible velvet in the first one either :~D

Because these are supposed to be more of a brownie, feel free to leave off the frosting if you don’t have time. Just lightly dust the top with powdered sugar.
I love the fact that these are finger foods. How many times have I brought regular brownies, or Rice Krispy Treat to events, only to set my tray down next to a dozen that are almost identical?

These delicate morsels are a twist on an old favorite so don’t be surprised if the tray disappears.

These are so soft, chewy and moist and flavored with all that red velvet goodness. They have just a touch of cocoa powder to give it that oomph without it being a full-on chocolate brownie. And of course, the red color is GORGEOUS!
