This pie is easy enough for a 3rd grader to make!

I love having recipes that are easy enough for kids to make and this one totally fits that bill.

Being able to measure things out and follow directions is so valuable and yet sometimes we don’t stop to think of how many things we can teach simply by spending time in the kitchen with our kids or grandkids.

Plus, when they get to serve this pie to others and see the delighted reaction when people put their fork of this recipe into their mouths it is a real self esteem booster. They did it. They really did it.

Now, you don’t have to be a third grader or even have a third grader to make this amazingly scrumptious pie. It might just be one of your favorite go to recipes from now on ..especially when heating up the oven isn’t an option for keeping your house cool.

Pie anyone? Coming right up!

Quick Tip: If you don;t have Oreos, feel free to make your favorite shortbread or pastry crust. But seriously, how can you top vanilla Oreos?

Some things never go out of style and this simple to make dessert is at the top of the list.

A few days ago we went to central California to say a final farewell to one of our favorite gals. She was 102 and 1/2. She made sure people knew about that half!

Even though we were not related, we still called her Grandma Dorothy. In fact, everyone in the town she lived in called her that.

At her funeral, many people recounted how she played piano by ear, tell stories, and most of all, how she could cook. Tapioca Pudding was one of the things she was known for.

One evening after setting her Tapioca pudding in the extra refrigerator outside the back porch, Grandma Dorothy heard something making some noise out the sliding glass doors. She went to investigate and was startled to see that a big brown bear had opened the fridge, taken out the bowl and was just finishing off the last of her pudding.

It was all her daughter, Georgia,  could do to keep Grandma Dorothy from charging outside with her broomstick and confront the pudding thief. Grandma Dorothy was so mad, I think Georgia might have actually been worried about for the bear!

The bear never came back, but I am sure he never forgot the taste of Grandma Dorothy’s delicious dessert.

“A classic tapioca pudding recipe that requires a lot of attention, but it’s worth it. Tapioca pudding is a great comfort food and can be served warm or cold.”

Quick Tip: This recipe is wonderful served with a sprinkle of fresh nutmeg and a few fresh berries. what a wonderful way to end the day. Sitting on the back porch, watching the stars come out and eating Tapioca pudding! Just be careful of bears :~)

One of the things I did when our kids were younger was to get them involved in the kitchen. I would wash their hands, put on their little aprons, and pull stools next to the counter for them to sit on.

It was a time to talk, to share, to teach, and a time when they felt the satisfaction of producing something they felt proud of and shared with others. It isn’t an easy thing because it does take time and energy, but it was worth every second.

One of the benefits is in the math department. When you are doubling a recipe a youngster can see for themselves as they measure out ingredients that 1/2 plus 1/2 does NOT equal 1/4, but rather 1 whole. Measuring out vanilla or salt is also key, 3/4 plus 3/4 is not 6/8. Well, you get the picture, and thankfully so does you little kitchen helper.

As someone who struggled with math growing up, I loved being able to offer a hands-on approach to learning with my kids.

Finding recipes that are easy enough for the youngest of cooking enthusiasts to help with isn’t always easy, but this one is a sure hit.

Quick Tip: If you don’t have blueberries and strawberries, feel free to swap in another fruit such as banana and raspberries. I love the patriotic feel of this cake, but if you are serving this at a baby or bridal shower it would be easy to stick with a color theme.
