One Potato, Two Potato, Three Potato, Four…

Oohh man I wish I had kept track of how many pounds of potatoes our family have consumed over the years. Or maybe I should say truck loads!  We are huge fans of hash browns to potato soup and everything in between.

Potato sides are huge because they are so filling with makes them easy on the budget and when you have a houseful of family, friends, or guests, being able to feed every one without breaking the bank is a huge reality.

I remember when the main potato that was the most consumed were the russets. They are still super popular, but now there are other standards such as Yukon Gold and small red potato. Yeah for spuds of all shapes and sizes!

This is what Chelsea of Gal on a Mission has to say about this favorite side dish.

It’s a fantastic side dish or it really could be eaten for breakfast as well. It’s loaded with potato slices, cheese, bacon pieces and an awesome custard (eggs and milk).Everyone will be coming back for seconds!

Quick Tip: sprinkle the top with cut chives before serving.

Whether the day is cloudy or Sunny-side Up this hearty SoCal inspired breakfast will really hit the spot!

I guess I never thought of putting avocados in my scrambled eggs which is funny since I have been known to add fresh Guacamole to my breakfast burrito! But this is the perfect way to cook up breakfast for more than once.

Since we have a kid down the street who sells the avocados from his tree I don’t mind buying them when they are in season. In fact he makes deliveries on his mountain bike so that makes the deal even better.

I love the idea of just cooking your eggs in a bed of potatoes and bell peppers. However, I am such a push over for onion and adding in a bit of chopped zucchini as well.

Who knows, if you are lucky you might even get a double yolker! I love it when that happens. Sure it is very rare, but it still happens and it just makes the day extra special. Just like this recipe!
Extra goodness. Extra Fresh. Extra amazing.

So grab your apron and let’s get the crackin’. Those eggs aren’t going to cook themselves!

Here is what the chickens have to say about this farm fresh breakfast.

Cluck..cluck cluck cluck..cluck!

Quick Tip: in a hurry? Cook the eggs so they are over medium and wrap up a scoop of this in a large tortilla.

Whether you are hosting a slumber party or a tailgate party, this spud is the best!

I remember having “potato Bar” dinners when we had all the kids at home and half the neighborhood kids as well. Being able to feed a bunch of people without getting stressed at all the meal prep and post party clean-up.

This is also an easy dinner for when you are having a bunch of people over. You can be in charge of cooking the potatoes and have everyone bring their favorite topping. You can have a taco theme or mix it up a bit with other flavors.

And the best part is that people can build their own spud, much like a taco salad, so they are getting exactly what they want. Perfect for those on the pickier side!

If your group is large, you can keep the hot aluminum wrapped potatoes in an empty ice=-chest or freezer bag to help them from losing their heat.
The other big benefit from this recipe is that you can literally have all the ingredients prepped several days in advance before you need to use them.

If you know you will be having back to back meetings, school activities, company, consider having a few meals that are ZERO effort to get to the table.

Any left over potatoes can be used for hash browns the next morning! How is that for making life delicious!

Here is what Holly from Life in the Lofthouse has to say about this family favorite.

Taco Potatoes are crazy good. I love everything about this fun and delicious meal. Taco potatoes take ordinary baked potatoes to new heights! Seasoned ground beef, cheese, lettuce, sour cream and salsa. Everything you love about a taco all over a potato.

Quick Tip: I actually am partial to the Yukon Gold potatoes. If you have a favorite feel free to swap them out.
