Wondering if You have time for a cup of coffee? When these are hot out of the oven, you will want to make time.

I grew up near a place called Apple Hill. Every fall as a teenager I worked at one of the many orchards serving up all kinds of yummy apple recipes, including caramel apples, apple pie, apple cake, apple doughnuts and apple cider. But, I don’t recall ever serving up apple muffins!

These are super easy and chances are you already have most of the ingredients in your pantry and fridge. Martha Stewart uses a Macintosh apple , but seriously, any baking apple will work fine. If in doubt you can always grab a granny smith apple. In fact these muffins are going to be gone before they are cooled so you might just want to grab two in case you need to make another batch.

One of the things I loved about working in the orchard was seeing how many varieties of apples there were. Each apple was distinct and had various benefits. We had neighbors up in the Sierras who had an apple orchard. It was over 3,200 foot elevation and the Arkansas Blacks could not be picked until after the first hard frost. That was when the sugar set in. Who knew?

They weren’t great for eating because they were hard and super crunchy, plus a bit tart, but they made the best apple butter you have ever tasted.

So pick your apples wisely to get the best flavor in what you are cooking and baking.

Then there are the Pink Lady apples..and Honey Crisp..oh my!

Marvelous muffins for breakfast brunch or anytime! Macintosh apples and a double dose of oats add a boost of nutrition to these crowd-pleasing treats.

Quick Tip: Feel free to make a double batch of these muffins. When completely cool, wrap in saran wrap and place in freezer bag. Put bag in freezer. When you want to have one or take one with you to school or work, all you have to do is pull one from the bag and go. It will defrost soon enough or just put it in the microwave for 10 seconds.

Wow, I don’t know about your household routine, but ours can get a bit crazy.

With Breakfast being so important I hate having the kids rush out the door without something that sticks to their ribs. Heck, I hate rushing out the door with an empty stomach!
Sometimes cold cereal just doesn’t hit the sop and cooking up eggs or toast? Yeah, that will leave a mess. So when I saw all the hype about overnight oats I thought, I might just give it a try. I was pretty skeptical, I mean if it isn’t cooked then what will it be like?

I love it!

Seriously! I buy a big container of Greek Yogurt at Costco and make up 6 of these at a time. When you put the mason jar lids on, they keep just fine. The next morning I just grab one, plus a spoon and I am ready to go.I love being able to mix it up with other fruit that is in season as well.
I just picked up a bag of fresh peaches..mmmm now that sounds pretty good.

I love making these in small mason jars, but if you have little ones you might consider a plastic container that is a bit more safe especially if you plan to take this to the early morning soccer or football games. Glass at a park isn’t always allowed. Didn’t I tell you this was an awesome breakfast!

This is what my teen said as he grabbed one of these last Saturday before Football practice.

Mmm..mmm..MMM..thanks mom.

Quick Tip: Don’t have fresh berries? I have used frozen berries and they taste just fine, in fact you don’t even need to defrost them!

Remember the days when a snack was something your mom made from scratch? Time to get back to basics with this simple recipe.

Those were the days before high fructose corn syrup and partially hydrogenated oil was part of our vocabulary.

My mom would make individual sandwich baggies of trail mix and dried fruit and I remember the taste of her homemade fruit leather from our area’s farm fresh produce.

Today, convenience often trumps healthy alternatives. Being able to rip open a foil pouch is so much easier than making something from scratch. I think it boils down to what you want to feed your family.

Seriously, it is not practical to think that everyone is going to have time to sit down for a hot breakfast. One of these granola bars and a string cheese and you are fueled for your next adventure wherever that might take you.

Plus, for road trips or long hikes, this is something that is easy to take along. Actually, I think this might be a great snack to take on your next trip involving air travel! Not that I am ungrateful for the Tablespoon of Peanuts handed out, but having something a little more substantial would be nice for those trips where you are going to have a long flight followed by a lay-over.

Whatever the case may be..I hope you enjoy these as much as my family does!

I tried several different recipes before I found one that I knew my kids would love. Baking the first five ingredients before mixing made a huge difference in how the bars turned out.

Summertime and the pickin’ is easy!

I remember the summer day when we lived in Fergus Falls, MN and my friend Ginger Vennerstrom asked me if I wanted to make fresh from the field strawberry jam.

I had no idea where the best U-Pick patches were, and I had never made jam before, but I decided to give it a whirl and so early one morning, while the dew was still clinging to the green leafy foliage I loaded our kids up in our old Suburban, and we picked up Ginger and her boys and off we went.

The fresh earthy smell greeted us as soon as we stepped onto the edge of the large field. We carried buckets for our luscious treasures, and soon we had picked enough to make jam that would last throughout the year. Everyone’s fingers were stained a red color. Juice, of berries that had been bitten into, were dripped down the front of our shirts.

“No wonder Ginger had told us to wear old clothes,” I thought as I brushed off the dirt from my knees.

Berry picking and jam making were an incredible experience that we carried on for several years until we moved. Ginger..this recipe is for you!
