The greatest part of these enchiladas is that the left overs are the BOMB!!

My mom makes the best beef enchiladas. I would often ask her to make them for my birthday dinner. I learned how to make enchiladas and guess what. my kids often ask me to make them for their birthday dinners.

Every once in a while I make them just because everyone loves them so much. Hopefully, your family will love these as much as we do.

Usually, I make my enchiladas with canned sauce. But this recipe comes with a recipe for homemade enchilada sauce.

Perfect!  Once you make this dish you will never have to wonder what to fix for Mexican Food night again!

Mexican food… ahhhhh Mexican food. I just simply do NOT get tired of eating it! Tacos, nachos, burritos, chimichangas, fajitas, and enchiladas. There are so many recipes for enchiladas, but this one is my absolute favorite one. Beef enchiladas with something extra… a homemade enchilada sauce!

For those following Weight Watchers points this full of flavor dish weighs in at only 8 points!

I love being able to fix food for my family that everyone will love, but when you are keeping an eye on calories it seems that lean meats and lots of vegetables are the staples on the table.

Being able to create something that will make everyone happy that it is dinner time is a huge win -win. Plus, so many people are trying to watch their waistlines without sacrificing good food so this casserole is perfect to take along to any gathering or get together

My family loves enchiladas. It is one of those things I fix on birthdays and special events since it is often requested. Anytime our son, who served in the Marines, would be coming home from a deployment I made sure it was on the menu.

Because this is super easy and sensible on calories, I think we might be having this more often.

This Layered Chicken Enchilada Bake is like a cross between flavorful enchiladas, a hearty casserole, and an artfully layered lasagna (with tortillas in place of pasta). The flavors and textures are fantastic. I love the sweet kernels of corn with the zippy enchilada sauce and between the chicken, tortillas and two kinds of beans, this casserole is super filling. Plus, it’s easy to make and you don’t have to roll any enchiladas – bonus!

Bring on the Chips Because This Salsa Is The Bomb!

I used to think that mango and salsa didn’t belong in the same sentence let alone as a recipe. The mangos I had eaten were a bit on the slimy side and the thought of dredging a perfectly good tortilla chip through the sweet mash seemed almost criminal.

But, that was before I learned how to pick out a good mango and cut one up. One of the perks of living in Southern California is the abundance of fresh fruit for such a long season.Mangos are a staple at our house.

Two of our kids joined Ballet Folklorico when we moved from Northern California to San Diego. The culture, dance, and food is bright and colorful. Just like this fresh fruit salsa.

This easy recipe is a perfect blend that makes my taste buds feel like are having a fiesta! It is perfect to serve with chips, on fish, and whatever else your heart desires.

Quick Tip:  If you do bring home a mango that’s slightly firmer to the touch, and not quite ready to go — ripening is easy! Just leave the mango out at room temperature, OR, to speed up the process, let the mango ripen (also at room temperature) inside a paper bag.
