This Sandwich Will Make Your Day

I think sandwiches are one of the most underrated foods out there. Believe me, I have made my share of sandwiches over the years!

They are totally portable, can be vegan, gluten free, and whatever you love can be added in!

From Peanut butter, banana, and Nutella to a classic twist on a Monte Cristo classic, a great sandwich just makes the day easier to get through!

I love being able to serve up toasted sandwiches as a side to homemade soups. Since I don’t love doing a lot of cooking on Sundays. Don’t judge me! It is my day off too!

Being able to make a great sandwich that is healthy and hearty is perfect.

I can’t think of a better “grilled cheese” than this delicious and easy-to-make Monte Cristo Style Grilled Cheese Sandwich. I was first introduced to the Monte Cristo as a kid. This was one of my own mother’s quick, go-to meals when I was growing up, so as you can imagine, it sort of holds a special place in my heart.

Love being able to make something everyone will love for dinner without making a mess? Yeah.. Me Too!

This is kind of crazy, but I have always wanted to take Tap Dance. Several Years ago I Signed up for class, but after I bought the tap shoes, convinced a friend to sign up with me, and made arrangements for my two young ones to be watched for an hour a week, I found out I was pregnant!

My doctor said as long as it wasn’t clogging I was okay to stay in the class, so I did. I tapped until a few weeks before I delivered. Put it this way, I couldn’t see my feet but I could hear them! And that was the end of my tapping.

Eighteen years later, I am signed up again and am having a total blast, but on Tap days it is nice to have something I don’t have to spend a lot of time preparing. And that is when this dish makes an entrance from stage right. (That is a little theater lingo I picked up.)

Anyway, chicken and rice! Who doesn’t love a good chicken and rice casserole sorta dish. But the beauty here is that it’s all made in one skillet, quickly and before you know it dinner is ready to be served.

My Crock Pot Is The Best Friend I Have… In the Kitchen!

I just made a big crock pot of barbequed pulled pork for sandwiches. It was awesome to mix it up a little. I mean the everyday meat and cheese sandwiches get a bit boring. I even put a quart size bag in the freezer for later when I am just too tired to cook. Well not everyone wants pork every week. I know I don’t!

So finding this chicken that was super functional was awesome. Especially since it can be used on salad, in burritos, or just served with rice and beans.

And being able to serve this on a bed of lettuce is great. I love making salads for lunch. But I love being able to make several for the week ahead. I put some dressing in the bottom of a mason jar, then a layer of chicken, some garbanzo beans, lettuce, then put the lid on. When I am ready for lunch I open the jar and turn it upside down on a plate.

This crock pot cheesy chicken would be great served over a bed of rice too. Also, stuffed into a flour tortilla to make a delicious tasting burrito would be tasty. I know what we are having for dinner tonight. Yum!

I am such a push over for anything with bacon in it and so is my family!

My mom made homemade macaroni and cheese the whole time I was growing up and I make basically the same baked version for my family. But adding bacon takes this to a whole new level of YUM! I wouldn’t be surprised if I caught my kids eating this for breakfast because it is so good!

Adding in that this is actually a slow cooker or crock pot recipe makes this even better. I am sure you avid Insta-Pot enthusiasts are already all over this kind of recipe, but for this crock pot rookie, I am still learning the tricks of the trade.

I love that this doesn’t require turning on the oven! I mean who really wants to heat up the house when it is already warm and there are times when being able to keep something warm is perfect.

Think family gathering here, church potluck, baby showers, or just one of those busy evenings when everyone is getting home at different times.

Hopefully you will have left overs because they are wonderful to take in your lunch and heat up in the office.

So plug in and get to cookin’! This is once dish you are not going to want to miss!

 “One Sheet Meals” are the new crock-pot dinners!

Seriously, I thought it might be a fad at first. After finding a few recipes that had everything you needed cooked on one cookie sheet I can see the attraction. Simplicity at its finest.

Because it can get pretty darned hot in parts of the country it is nice to know that you don’t need to have something simmering all day long. Just pop it tin the oven, set the timer and set the table because before you know it , dinner really will be served.

I think this would be a super cute meal if you use the multi color potato fingerlings as well. What do you think?

You all know my love for one pot dinners and that extends to sheet pan dinners. Seriously guys, dinner never got easier with this sheet pan dinner. All you have to do is season your meat and potatoes, set it and forget it. It’s really just a matter of how you season your meat and potatoes.

Loaded with his Favorite Fixings, this dish is fit for a king!

Okay, well I am not sure what real kings eat, but for King in my castle? Yeah, this is what we are having for Sunday brunch..what a minute..Do real men do Brunch?

Whatever, no judgment here. I am just saying that well-crafted quiche is a far cry some mamby-pamby breakfast. In fact, we tend to eat quiches and frittatas on our “Breakfast For Dinner” night!

If you have a garden or a favorite local farmers market, think about using fresh vegetables on this quiche as well as adding more inside. I am one who will try to sneak thinly sliced zucchini into this as well as part of a bright bell pepper.

I love that you can be flexible with this kind of a recipe. The thing I also love? LEFTOVERS! Whatever is left, just wrap up and save for later.

Having a big crowd for brunch, make a few of these and vary the ingredients a bit to add a variety. Simple. Delicious. Healthy.  And will fill up even the hungriest Kings in your family.

When we moved to Southern California there was a restaurant that our older boys took us to. They raved about how zesty and fantastic the ribs were.

I thought maybe they were exaggerating a bit since they missed my cooking. I was wrong! Phil’s Bar-B-Que was a huge hit on our family trip and has since become one of our favorite rib places.

The big platter of food was devoured by our carnivorous offspring like Vikings after a plunder. When I saw that there was an actual sink in the family style dining room I assumed they were going a bit overboard. Not at all. The sink was perfect to rinse off what would have taken a small bale of napkins to clean up.

Ever since then I have been hoping to find a recipe that tastes similar and I think this one might be it.

I used to joke that dinner time was the worst hour of the day. Something always happens.

When we had all six kids at home I really had to have a good system to make sure dinner time was not a high “Code Red” stress time. One of the things that really saved my sanity was to focus on how I could make the dinner hour something we lived through, seriously, dinner happens every night so it shouldn’t be a shock.

The number one thing I started doing that made a huge difference? Planning ahead.

Chicken Broccoli Rice Casserole is delicious, filling, frugal, and so freezer-friendly! If you freeze the bags flat, you can store them on their side like filing folders to fit a lot in a small freezer.

I Have Baked A Lot of Bread, But Never One Topped With These Ingredients.

 

I started baking my own bread about 25 years ago. I made several loaves at a time and put some in the freezer. It was a long day of waiting for the dough to rise, punching it down, kneading it, letting it rise again, and then baking. But it was worth it.

I heard once that the smell of freshly baked bread helps to increase your sense of well-being and I totally believe it. My family is used to eating sandwiches made with home-baked bread, homemade pizza crusts, and sweet bread with dried apricots, dried cranberries, and nutmeg.

Several years after I started baking bread the best thing ever was invented. Bread machines! No longer did bread baking take all day, it was just a matter of putting in the ingredients and waking up to the smell of a bakery right in my own kitchen. I still use my bread machine, but knowing a few recipes I can create by hand it nice as well.

Can I just say that this roasted strawberry and feta focaccia with balsamic glaze just might be one of the best things to ever come out of my kitchen?  I don’t think that’s overstating it.  Well, maybe.  I do tend to state that everything is my favorite. But still.  This was incredible.

This Side Dish Dresses Up Any Picnic!

I just checked to make sure our gas grill is ready to fire up. The taste of grilled chicken, crusty french bread and a cold side make eating outside extra awesome. Especially when you don’t have to spend a ton of time cooking in the kitchen.

This recipe originally called for frozen spinach but I love being able to toss some fresh spinach into anything for an added wholesome touch.

Being a busy family on the go means having to either have great recipes or having to buy prepackaged foods to take to picnics and get-togethers.

Thankfully, this recipe calls for everything I usually have on hand and is super easy to make the day before. I just put this into a large zip-lock bag to save on space and when it is time to serve, just pull it out of my ice chest or fridge, put into a bowl, add a small handful of extra Parmesan cheese on top and BAM..we are ready to dish up!
