This is the cookie recipe that actually shut the internet down because of traffic.

I love the taste of coconut. Growing up the only time we really ate coconut was when my mom would bake German Chocolate cake. Ohh my goodness that brings back such amazing childhood memories. Probably because it was my Dad’s favorite cake in the world so we usually had it for his Birthday or another family celebration.

Crazy thing is my dad can not stand coconut with the exception of classic German Chocolate Cake frosting. So macaroons were not something my mom ever baked.

But once I grew up and had kitchen of my own, I realized that there were a few recipes I had never really attempted before.

One of our daughters loved coconut and one day we decided to make a batch of macaroons, They were a bit flat, but for a first attempt the flavor was spot on.

This is what Trish has to say about her cookie recipe.

One of my all-time favorite coconut indulgences is coconut macaroons. These are for the true coconut lover. The best coconut macaroons are beautifully toasted on the outside and sweet and chewy in the center. I can’t stand a dry macaroon!

Quick Tip: I don’t know if this is true or not, but my great Grandmother suggested not baking something like these of making candy on a day that was overcast or humid. That might have been why my first batch were flat!

Bacon and Oatmeal? What was she thinking? How about AMAZING.

My Great Grandmother had a small “drippings can” next to her stove. She saved all her bacon drippings and when she cooked up eggs or pancakes in the morning you could smell the smoky flavor wafting through the small house.

Yummo.

I know that times were hard and she often talked about what they did to survive through the depression such as saving every scrap of fabric for small quilts, re-purposing flour sack material, and “putting up” produce from their gardens.

She never threw out anything, including the ball of aluminum foil she kept in case her berry cobbler needed covering!

Bacon drippings were something that she used in her cooking. I am not sure if she ever made cookies with it, but if she had thought of it, I am sure that little gal from the Ozarks would have given it a try.

With as much as my kids go Hog Wild for bacon, I am going to have to try this recipe out for myself!

This is what Adrianna of A Cozy Kitchen has to say about these very old fashioned cookies.

These Depression-Era Oatmeal Cookies are made with bacon drippings rather than butter. And then I added some chocolate chips and bacon…’cause why not?

Talk about Simple! You will never buy bagged cookies again when you see this recipe.

In the amount of time it takes to pick out a bag of cookies at the store and pay for them, you could already have these in the oven!

The best part is that your kids can make these and help clean up the minimal mess.

There have been several times that I have seen cake mixes on sale at the grocery store. The problem is that we don’t eat a lot of cakes from mixes so I usually just walk on by! I had never thought to keep several boxes on hand for cookies!

Our cookie jar is usually full, it requires not just the baking time, but also the cleaning time. Every once in a while, the supply runs low and time makes it impossible to take on a few hours of baking. This recipe is a slam dunk!

I will have to make these for our next 4th of July party!

Quick Tip: If you do not have Funfetti cake mix, use a white cake mix and toss in red and blue sprinkles. How much? I don’t think you can have too many sprinkles but I will let you be the judge of that.

Wow, this recipe is so easy and simple. You won’t believe it!

Seriously? I hardly ever buy boxed cake mixes! We are more of a cookie family so unless I am baking from scratch, we rarely eat cake. But this cookie recipe is causing me to re-think cake mixes.

The fact that this recipe uses fresh strawberries and has only 5 ingredients might just make this something I need to keep in mind.

Plus, who doesn’t love the flavors of white chocolate and strawberries? Bring on the lemonade because Summer Time is here!

I think these would also be adorable for baby showers if the baby is a girl, or even the gender reveal party that seems to be the rage these days! Whatever you are celebrating, I hope this recipe will have you seeing pink.

Quick Tip: If you don’t have any fresh strawberries it isn’t the end of the world. You can substitute for 1/4 of a cup pf yogurt, sour cream, or oil.
