If You Grew Up Eating Campbell’s Mmm-mm-Good Soup, You Will Love This

I was perusing the soup isle at the grocery store the other day because I needed a can of cream of chicken soup. When my eyes landed on the Bean and Bacon soup I just couldn’t get it out of my mind. I loved eating Bean and Bacon soup when I was a kid, it was so creamy and satisfying. I almost picked up a can but when I saw how much it cost for what was sure to be one meal I hesitated. I knew I could make a whole pot of soup for my family and have enough for leftovers if I made it myself, and even though I grew up on the taste of the Campbell’s version I know that anything made fresh tastes so much better and is better for you.

Boy was I right. This soup is really easy to make and is so delicious that I am already looking forward to making it again. There is something about a bowl of this, cupped in your hands, that just warms you to the core. So while the commercial jingle says “Mmm..Mmm..Good.” I am now singing a new tune that states “Ahh Ahh Amazing!”

I love that this uses canned northern beans, but for you die hard Insta-Pot chefs, go ahead and start with dry beans and cook them up first. Talk about stretching your food budget dollars.

The Best Pasta Dish Hack I Have Seen and Is So Simple!

Do you ever wonder how restaurants like Olive Garden seem to nail it on all their dishes? I do! I often find myself looking at the plate of food before eating it just to see if I could recreate something similar in my own kitchen. I have been close, but there was always something that I wasn’t getting. Until now.

 

I had remembered to add all the ingredients but it still wasn’t the same. When I read this recipe I realized what I was missing.  I needed to know how to cook it. Utilizing the pasta water creates a sauce that clings to the ziti noodles like two lovers at the airport terminal saying goodbye.

Gone are the days of dumping plain pasta into a bowl and spooning over the sauce over it which just slides off into the bottom of the bowl. Why does it matter? Because the starch in the pasta cooking water emulsifies with the fat in the sauce causing it to naturally thicken. Brilliant and so easy to do from now on.

I still love going to Olive Garden once in a while, but it is nice to know that I can create something wonderful for those around my dining table any time I want.

The Taste Of a Classic, Only In A Soup

I love making and eating soups. I think that on a brisk day nothing beats a big bowl with some fresh breadstick to just warm you up from the inside out. We lived in MN for nine years and believe me, there were lots and lots of soup days.

When we moved back to Northern California we lived in the Sierra Mountains. It was a wonderful feeling to have a big pot of soup or stew on the stove when snowflakes started to fall.  The perfect meal after a day of sledding or shoveling the walkway!

Then we made the move to San Diego area. I have to admit I miss the seasons. Not only is it hard to think of fall or winter when you are still wearing flip flops and short sleeves, we don’t eat soup very often. At least not as often as I would like, but thankfully I hear temperatures are going to be dropping soon. We might even have a few mornings where you will be able to see your breath when you walk outside. If there is a dusting of frost, well down in SoCal they refer to that as a weather event.

If You Love Tomato Soup, You Are Going To Flip Out When You Taste This

I never knew how much I loved tomato soup until several years ago. My mom used to use the canned soup in recipes but she never made it to serve as a soup. I hadn’t really tried it until I was an adult. I just remember the first time I tried it at my favorite restaurant. It was the Soup of The Day so I figured it couldn’t hurt. But, after only one spoonful I knew I loved it. Seriously! On a chilly day there is nothing like that creamy soup that just warms you up from the inside out. I love adding in a few spoonfuls of my favorite salsa to heat things up a bit more and a small dollop of sour cream on the top to stir in.

I guess I had never thought to make this from scratch, which is hilarious since I make everything from scratch, including marshmallows!  Ree Drummond takes this recipe up a notch by making adorable croutons to float on top. They remind me of a smaller version of what I make for French Onion Soup.  Ree goes the extra mile in so many of the things she does. I hope one day I will have the opportunity to visit her Mercantile Store, because if it is anything like she is I am sure it is down home, practical and very personable.

Quick Tip: If you are having a huge crop of tomatoes and are not sure what to do with them, consider lightly rubbing with oil, cutting them in half and placing them cut upside side down on a baking tray to place under broiler until blistered. It is a great roasted tomato taste.

You Don’t Need To Be Amish To Try This Casserole

This is the absolutely the best chicken casserole I have ever made. Probably because is so easy to put together and tasted great every single time I have made it. The great thing is that if you are super busy you can even pick up a rotisserie chicken.

Why is it called Amish Casserole? I have absolutely no idea except that this is super frugal and most likely uses ingredients that you probably already have in your freezer and pantry.

It is really tough when you have to stop at the store for just one or two items. If you are anything like me you end up getting several things you don’t even need. Your family will love it.

The reason some people don’t make casseroles? It is too much for just a few people to eat. No problem. Go ahead and divide this into three loaf pans and freeze two of them for later! Before you bake them go ahead and put them in the freezer. Take out the night before and bake as usual. So what are you waiting for!

I came up with this casserole, based off of a traditional Amish chicken casserole recipe  using REAL ingredients, that has all the above reasons covered. It is delicious, easy to put together, and best of all, a huge hit with the family.

After an epic fail.. This Recipe is a total Game Changer!

My husband loves Chicken Pot Pie. One day I tried to make one but it seemed more like a chicken stew in a soggy crust. To say the least I was not impressed.

Even though my husband kept his smile on and ate it, he never asked me to make it again.

Every once in awhile he picks up a few frozen ones, but seriously, the gravy oozing out almost makes me gag. I would rather eat a peanut butter and jelly sandwich than one of those frozen chicken pot pies.

When I saw this recipe it looked gorgeous. I love the fact that it uses puff pastry and rotisserie chicken. How easy is that?

And being able to do the basket weave on top? Yeah, I think my husband will definitely love this more than the frozen version!

 Knowing you will have dinner ready in under 30 minutes is a huge sigh of relief. Can I get a “Woot Woot!”

There is nothing like a few good recipes to make life a bit more manageable. This is one of them. This simple recipe can be made in the crockpot or on the stove top.

When Andi first released this recipe to make in her crock-pot she noticed people were having a few varied results regarding the rice.

Basically, every Crock-Pot might be a bit different so if you know your Crock-Pot like the back of your hand then go ahead and go that route, but if you want to make this on your stovetop, then you can have it ready to put on the table lickety split.

I love my Dutch Oven. It is a red enamel that looks good enough to set right on the table. Talk about convenient.

This is what Andi of The Weary Chef has to say about her one-pot chicken and rice dinner.

Surprisingly, my 10-year-old was excited to taste this buffalo chicken rice and said it was the best thing ever. (•◡•) Had I known he would want to try it, I would have cut back a bit on the wing sauce. He still ate a few bites despite the spiciness.
It’s very easy to adjust the heat just by using more or less hot sauce. You can also use as much or little cheese as you’d like in the recipe.
