One taste of this and you won’t be able to stop thinking about these.

I have made a lot of cookies in my lifetime, but bars are a whole other thing. I mean it is almost a cross between a cookie and cake so I figure why not just make one or the other, but these bars hold their own when it comes to flavor.

These are the kind of things that I remember being on plates at our 4-H meetings, or church potlucks. They are so yummy that even though you eat them with your fingers you wished you had thought to put them on a plate and use a fork.

But hey, you can lick your fingers all you want, no judgment here.

Speaking of Old Fashioned. Does anyone remember the “Dime A Dips” fundraisers? They used to have a huge potluck at the end of every month for our big 4-H club. Every scoop of food you put on your plate or piece of dessert cost a dime..get it? So really it didn’t cost that much to fill up, but then again we were the ones who brought the food.

The biggest thing was that you always watched to see if your dish was worth scooping up or taking a serving. This recipe is so amazing, not only were the bars gone, but I am almost certain someone licked the plate clean!

So grab a cake mix and an apron and mix it up a little. You will be glad you did and so will everyone else.

Make An Impression That Is Unforgettable!

I love making desserts, but I tend to get a bit in a rut sometimes. And I absolutely LOVE lemon and blueberries together. Anytime of day!

But when it comes to cakes, I am not always very confident. Sometimes they tend to be dry and we end up having now being able to eat all of it. Sad but true. I know I have mentioned before on Urban Retro Recipes that we are more of a cookie and pie family.

While I was looking for good blueberry and lemon recipes I came across this one. It is for a poke cake. There is no danger of this drying out! It has moisture and flavor seeped into every last bite. In fact, this makes a great cake to make ahead. Perfect for when company, like your mother-in-law, comes to visit and you want everything to be cleaned up before they get there. So you have more time visiting and less time cleaning in the kitchen!

That’s right— this one’s a poke cake! We’re filling it with pudding, topping it with a homemade blueberry sauce, and then on top of that, we’re adding a delicious cream cheese whipped frosting that just takes it to whole other level.

I love the flavor of citrus. Usually I make lemon curd, or have key lime pie, but this cake brings all those flavors together in this wonderful cake.

I think I really fell in love with the flavor of lime when I went to Belize to visit a friend.She used to put slices of the citrus in our drinking water. I am not sure if it was because the water wasn’t the best tasting or if she just preferred the light refreshing taste, but it really grew on me. Even the color of the thin green slices in the water looked nice and refreshing. In the middle of a hot and humid afternoon it was absolutely wonderful.

Every time I go to one of my favorite markets I pick up an couple of limes. Margaret would be happy to know that she still inspired me after all these years.

I still love the flavor of lime and this cake is loaded with it!

Nothing says LOVE like a homemade cake from scratch.

It had never ever occurred to me to make a cake from scratch until a few years ago. I mean, we have boxed cake mixes right?

Even the boxed mixes call for at least 2 eggs, oil and water. And we actually time the mixing on medium speed. But I was wrong. A boxed cake and a cake made from scratch are two totally different things.

We don’t even love cake in our family, we tend to be more Cookie lovers, but when I started making cakes from scratch that was a totally different thing.

This cake not only is made from scratch, it combines nostalgic flavors together. Guess what I want for my birthday cake!

 The two layers are separated by frosting and graham crackers. Let me talk about the graham crackers: they are toasted in the oven and have this amazing smoky crunch and flavor. Definitely reminds me of s’mores. Hard to resist gobbling them up right then and there.

This Banana Cake definitely has it’s A-PEEL :~D

I love the smell of banana bread being baked. In fact I usually bake up several batches at once since it take a while to bake and really, who wants to heat up the oven for just one loaf?

Whenever it was a cool morning, instead of turning on the stove, I would often just bake something instead. I guess you could say our home was literally warmed by fresh cookies and breads!

The taste of banana is such a classic for our family. We buy a lot of bananas. I know they get eaten quickly at a meal or even dipped in peanut butter for a quick snack.

My problem is that I rarely have bananas around long enough to get speckled so when we do I either bake something right away, or peel them and put into the freezer for smoothies of breads.

What about you? Did you grow up eating bananas? If so this will be a nostalgic taste of childhood.

I always knew when my Uncle Greg was coming to visit because mom would bake his favorite dessert.

What is is about special childhood memories and recipes that take us back to those tender moments of time?

That is how I feel about this recipe! Only my mom made the cake from a boxed mix and this one is from scratch.

It was always easy to tell when my parents really close friends from college were coming for a visit. The chocolate frosted cake was carefully set on a cake stand and we couldn’t wait until the first pieces were cut.

Moist yellow cake surrounded by a heavenly taste of creamy chocolate was a dream come true.

And the best part was there was always enough left over frosting to put between graham crackers as a special treat for lunch.

I can’t eat yellow cake with chocolate frosting without thinking of Uncle Greg. He loved to play John Denver songs and hugged everyone who came into his live. And he always acted like the yellow cake was the best one he had ever eaten.

So whether you are having company over, celebrating a milestone, or just want to indulge in a few of lifes simple pleasure. Bake.

Life it too short to not eat a good cake every once in a while and maybe..just maybe you can lick the beaters!

This Cake Will Have Your Family Going Bananas!  Literally.

The great thing about bananas is that they are so cheap. I mean the average price I pay is 69 cents a pound! My kids eat them like crazy so I am always buying more bunches..about as often as I buy milk!

Sometimes the bananas get a bit freckled. When other fruit is in season such as peaches, strawberries, and grapes, the bananas are not the first go -to snack. That is okay too! My kids have always been crazy about banana bread and muffins so this cake is really up their ally! Or should I say Tree :~D

When I saw that this was a great cake to include in my list for those with food issues, I happened to read about its origin, which is a glance back into a part of our history we often forget about. The Depression.

It is often referred to as Wacky Cake but was first named Depression Cake because you could make this without the use of some of the key ingredients, dairy and eggs, which were really expensive.

It is hard to imagine not having some of the basic ingredients available, but those gals made do with what they had. This cake is a great tribute to those who survived that very difficult time.

Vanilla Crazy Cake – also known as Wacky Cake or Depression Cake, doesn’t need dairy or eggs to make them. Ina Garten’s Inspired Flag Cake Worth Saluting

There is something about a stars and stripes inspired cake to really set the patriotic mood.

When we lived in Dutch Flat, we loved watching the old fashioned 4th of July parade.  Kids on bikes and go-carts, a bagpipe, lots of old cars, and of course small family decorated floats were cheered by the adoring crowd.

Everyone made two loops around the town that was settled during the gold rush, partially because the parade route was so small but also for tradition sake since the town was founded prior to CA becoming part of the Union. In the towns early years the trip was made one around with the Confederate flag and once with the Union flag.

As a mom of a Marine and an Army mechanic, I have extra love for all things red, white, and blue. This cake is a perfect way to celebrate the freedoms we enjoy.

Now, Ina Garten is one of my foodie heroes for many reasons, but the biggest is that her food always turns out. One of Ina’s most popular recipes is for her Flag Cake. And it’s awesome. But mine might just be better than Ina Garten’s Flag Cake.

Red Velvet Cream Cheese Muffins? Perfect!

I remember looking through the Prairie Woman cookbook with our daughter Amy.

When she came across the red velvet cake recipe we both decided right there and then that we needed to make it.

And we did.

We don’t eat a lot of cake at our house, we are usually more of a pie and cookie family, but this was a huge exception and it has been one of our family favorites ever since.

Baking a cake is a bit of a commitment. I mean, unless you are having company over, a whole cake is a lot of yummy goodness sitting around and seriously, I just don’t have the highest level of will power.

Plus, since it doesn’t have frosting on the top it is a totally pack-able treat that doesn’t need to be refrigerated to keep the icing from melting off on a hot day. Yeah, this one is definitely a huge win.

These muffins were a huge hit and the first “dessert” that everyone devoured. They were so bright and cheerful that you can’t help but want to dive right in and eat all of them.
