I never ate sweet potatoes growing up with the exception of Thanksgiving and Christmas. Even then, they were covered with brown sugar, butter, and of course the layer of marshmallows. You could hardly even put it in the vegetable side dish category. In fact, it almost seemed like a pudding.

Recently I have started making a few things with sweet potatoes and I am loving them. I can’t believe what I have been missing! They are so scrumptious that I almost would rather just eat these for dinner and skip whatever else I had planned to serve with it.

My original intent was to create a potato recipe to help with my portion control. Well that didn’t work, I ended up eating three.  Who am I kidding I knew at the first bite they were divine  I have serious issues with sweet potatoes…I just love them!

Quick Tip: If you don’t care for rosemary then try using another herb such as dill or chives. Plus, a few bacon bits sprinkled on top might just make this a winner in my book!
