Make this for a weekend dinner and guess what? Your family will beg you to make it again..maybe tomorrow!

Hey, I just got back from my daughter and son-in-law’s home. I call him my bonus boy because I love him just like one of my own! They are expecting their second baby any day now.

Since I live on the other end of the state from them and I might not get to be there as soon as the baby is born I decided to fly up and spend a few days getting meals planned, prepped and in the freezer so my daughter can take it easy until the baby gets here. Well, they do have a two year old so I guess I should say “Take it as easy as possible with a toddler under foot.”

We did quite a bit of food prep and one of the things we did was purchase a rotisserie chicken to make a casserole with. It was awesome to not have to cook that extra ingredient and it was perfect fr what we needed.

I just wish I had this recipe when I went there. I love that you can prep this, put it in a pan, freeze it and bake it weeks after you made it. Now that is a helpful meal right there. Looking in the freezer and realizing you have a few of these kings of meals in your freezer would be like looking in the dryer only to discover that someone left a five dollar bill in their pocket. Actually I like to consider that my tip:~D

So let me give you a tip my cooking friend. Don’t spend so much time making each meal when you can cook extra and freeze half for later, it is such a huge time and money saver and seriously, think about not having to wash all the pans every single night. Woot Woot!

Some days are so hectic, the thought of making dinner just pushes me to the brink of tears!

I don’t know about you, but it seems that on busy days the last thing I want to do is get out pots and pans and cook something up.

Seriously, there have been plenty of nights when we have had cold cereal or instant oatmeal. Having an off day every once in a while is normal but having a plan for tossing together a good meal can be easier than you think.

I love that basically, everything in this recipe are things I can keep in my pantry or fridge.

While this is a great meal, the best part is, being able to put something together with minimal clean-up so you can spend less time in the kitchen and MORE time around the table.

This creamy sauce with the tartness of sun dried tomatoes really puts the Ahh in Ahhmazing!

Nostalgic and delicious. This dish really brings back happy summer memories.

Every summer my dad’s side of the family had a big Family Reunion. It changed locations over the years and us kids, who used to go swimming afterwards all grew up and started having kids of our own. But one thing that has not changed are the long tables of some of the best cooking ever.

Homemade cherry cheesecakes, baked beans, potato salad, and Grandma Miller’s Chicken and homemade noodles.

Not just egg noodles like what you buy in the store, but floured dough noodles that were a labor of love.

She would mix the dough, then roll it out really thin, and eventually make small thin strips that would be dropped into the boiling broth.

It was one of those things that you couldn’t get enough of and knew that family reunion wouldn’t be the same without them.

This recipe is almost the same. Except instead of noodles the dough is cut into squares. So much easier, without compromising on the flavor.

This is what Tiffany of Eat At Home Cooks has to say about this Southern Hospitality Favorite.

I have made the same lasagna recipe since I was old enough to boil noodles. This NO-BOIL option changed everything!

My mom made lasagna a certain way, and I am pretty darned sure she learned how to make it from her mom. It was always delicious, always a hit, and always a big mess.  I used all my big pans and had so much boiling going on. It was totally worth it, don’t get me wrong, but it was a commitment.

Then, my daughter had a group of friends over for a few days and they decided to make dinner. One of her friends, Emarie, took on the task of making a lasagna. When she pulled the ingredients out of her grocery bag I was skeptical. Really skeptical.

After all, that is not how I made the traditional pasta, or my mom. Really, if you are not going through all the work, can it really be authentic? But it was! It was actually BETTER than the recipe my mom passed on. (Nothing personal MOM. Just stating the fact.)

I have made lasagna twice as much after finding this No Fuss recipe and I hope you love it as much as I do.

In the summer months, I have to admit, I tend to get a little lazy when it comes to side dishes. Really, why not cut up a watermelon and call it good! But every once in a while, the regular dish of baked beans, salad, or melon, might not be the best choice. Sure it is the easiest go-to, but how about trying something new.

This corn dish is savory and has a little heat. Plus you can actually prepare this in advance so all you have to do is toss it in the oven before you need it so it is hot and ready to serve. Seriously, I think people will love this.

If you have fresh corn, well, there you go! A new way to serve it. In fact, I love roasting corn on the BBQ, cutting it off the ear and putting it in the freezer for later use. I roast it right in the husk so it doesn’t dry out and has a bit of a smokey flavor. But, you can also just buy a can of corn and call it good. After all, this is supposed to make your life easier so let’s apron up and get cooking.

Imma had a recipe for creamed corn, but I never have that on hand. Ever. So was happy to see that she also had this version.

I think it is just as easy and actually looks a little better. Plus, I do like the idea of adding in sausage if you would like. Hey, I am all for cleaning out the little odds and ends in the fridge and if it sounds like it could go in this cheesy dish, feel free to add it in.

There are no words that I can use to satisfactory express how tasty this Caribbean Corn Pie is. Seriously! Am going blank on this one. Ok, here is my attempt at it. Spoon after spoon after spoon of Pillowy, Creamy, Corny, Spicy Goodness.

Quick Tip: Feel free to sprinkle bacon bits on top for a little added flavor. Not that it really needs any, but our family goes hog wild over anything with bacon on it.

I recently talked with my adult daughter about what she remembered about how I handled chores when our kids were younger.

She commented on the fact that I had a set list of chores with each child doing one 15-20 minute task every day, and that I planned out our meals.

Being able to sit down and think of 10 meals your family would love, shop for all the ingredients at once and do the prep and cooking in one slot of time saved me hours of work later.

I used to think of it as cooking it forward. Not only did it save on the cooking time, but the biggie was the clean-up.

Think about it, if all you have to do is put prepped ingredients together and put it in the oven, that is a huge saving of time.

This recipe is one that you can prep weeks before by just having the chicken cooked and cubed.

Kristyne of Lil’ Luna also saves time by cooking ahead. Now that is one smart Cook! Thanks for the useful tip.

You can buy cooked, chopped chicken, but I like to bake my chicken earlier in the morning. I usually line a cookie sheet with foil, add some chicken breast and drizzle a little bit of olive oil and lemon pepper. I cook at 400 degrees for 35-45 minutes.

Quick Tip: If you are not a big fan of celery go ahead and swap out that ingredient for green beans, broccoli, or zucchini. Seriously, this is a great recipe to cater to your families preferences.

I love pesto so the thought of a pesto chicken? Yeah..that is totally up my Menu Ally.

Recently I joined the local Weight Watchers. I know I need to lose a few sizes to get to the weight on my drivers license. I know I can do it, but my problem? I love to eat!

We always called this “Poor Man’s Stroganoff” because it was made with hamburger. It is friendly on the budget but rich on flavor!

You know you have a winner recipe when your kid comes home from the Army and asks you to make his favorite meal, Poor Man’s Stroganoff!

I have changed it up a bit over the years. Sometimes I add fresh Rosemary, sometimes I toss in sliced mushrooms, or even diced bell pepper, but basically it is always the same and I think that is why it is one of Scott’s very favorite things to eat. It reminds him of home.

This is also a super easy recipe to teach young chefs in the making since it is so basic.

Being able to cook, when your kids leave the house is a big deal, maybe even bigger than you think so give them several recipes to perfect. It will be nice to know they can cook for themselves.

This is what Jamie of Love Bakes Good Cakes says about her budget friendly recipe.

For nights when I need dinner lightning quick (and let me be honest by saying, or those nights when I feel lazy!), I use canned cream of mushroom soup. However, I have had just as great of success with making my own cream sauce – and I have provided BOTH options for you! If you don’t mind canned soup, feel free to use that shortcut. If canned soup is not your style, no worries there either – the from-scratch sauce comes together quickly and easily!

Have you ever wondered why dinner time is so frustrating? I think it is because there are so many choices out there on what to fix, finding the right recipe everyone likes, and that doesn’t require getting all the pans in the kitchen dirty.

Being able to have ingredients on hand is also key in creating meals that don’t feel like the same thing over and over.

I have to admit I don’t cook with instant rice very often, but seeing this recipe and how fast it is to put together is definitely a game changer. The real surprise for me was the fajita seasoning.

I also love the fact that you can basically cook this on an electric hot plate.  Take these ingredients and toss it in a dutch oven. Life is good.

I just came home after a long day of cooking. I was helping a friend who had recently had a baby get meals put together and in the freezer for later. We had pans of food cooking, simmering, and boiling. I chopped, cut, and assembled. In the end we had several meals that she will only need to pop in the oven and BAM. Dinner!

I wish I had thought to take this recipe along. Being able to cook up enough chicken for several meals and do all the chopping at once really saves time later on!
I usually don’t think to make something with bacon and ranch dressing mix, but I am totally going to have to try this. I think my family will love it and I think yours will too.
